ARCHIVED Its That Time Again...Sales Meeting
JNBunnie1 replied to jasonD2's topic in Coping with Celiac Disease
Unless your coworkers are Wheat Association of America employees, they probably won't think you're weird. Just call ahead and tell them you need naked chicken and green beans and when you get there tell them you're the naked food dude. -

Steak and A bJ Day huh? Boy, us girls are gonna have us some NICE Valentine's Days!!!! I'm back. I'm not so silly, I just got fired today. They've been working their way through pretty much everyone the guests like and replacing them with cheaper versions after harassing them into insanity. They put me through hell the past two weeks trying to come up... -
ARCHIVED Chocolate Sugar Cookies
JNBunnie1 replied to purple's topic in Gluten-Free Recipes & Cooking Tips
Yay! Just in time for my holiday baking. I recently made this gluten-free shortbread: Open Original Shared Link and boy is it good. These together would make a nice goody basket with some chocolate dipped pretzels.... That's what I'll be giving for gifts to some people, along with choc dipped strawberries and rice krispy treat bites. -
ARCHIVED Question About Flour And How To Manage It
JNBunnie1 replied to ciavyn's topic in Gluten-Free Recipes & Cooking Tips
As regards cookies, pretty much every cookie dough in gluten free-dom responds well to being refridgerated for a few hours. Even a day or two. It allows the flavors to blend and the flours to properly absorb the fluids. Try it with choc chip sometime. -
ARCHIVED Flourless Cookies!
JNBunnie1 replied to haleym's topic in Gluten-Free Recipes & Cooking Tips
Try making this recipe with cashew butter, sunbutter, tahini, almond butter. I'd think an almond butter cookie with cinnamon would taste like snickerdoodles. -

Just so you know, Woodchuck cider is gluten-free and Bard's Tale beer is gluten-free. It's not great, but it's better than Redbridge. Woodchuck, on the other hand, is quite good, and not too sweet. -
ARCHIVED 2009 Thanksgiving Disasters
JNBunnie1 replied to Ahorsesoul's topic in Gluten-Free Recipes & Cooking Tips
Your hot applesauce got such a huge 'ooohhh!!' from me! I know exactly how you feel and I'm trying that next time I'm that sick. My Thanksgiving disaster was minor- I learned a few years ago that Ener-g brown rice bread makes awesome stuffing, so I sent my boyfriend out to get it. He came home with their yeast free, egg free white bread. I figured it... -

Is it strange that the only time I find to come post and say hi is on Thanksgiving, the traditional day of female psychosis? I did all my cooking yesterday! How is everybody? Who's the new monarch? I aoplogize for my absentee-rulerism, I can only plead life insanity..... -
To answer the original question- the Bob's has more starch in the recipe, which will lend a softer, stickier end product. The rice flour mix would be stiffer and crumblier. So I'm guessing the first would be better for a roll. I also know it makes lovely tasting pancakes, so the flavor is good.

ARCHIVED Trader Joe's Nautural Turkey Gluten Free?
JNBunnie1 replied to spunky's topic in Gluten-Free Recipes & Cooking Tips
Paranoid has a negative connotation in general. In our world, it can only be a good thing. I'd just call them. -
ARCHIVED Irritated
JNBunnie1 replied to Dasmith's topic in Parents, Friends and Loved Ones of Celiacs
I find it fascinating how many new people come to this website, post something negative in tone, get a negative backlash (this particular one was admittedly over the top), and then complain about being made to feel unwelcome. I feel a need to frequent more message boards to see if this is a Celiac board thing or an internet thing..... -
ARCHIVED Gluten-free Thanksgiving
JNBunnie1 replied to KahleFamily's topic in Gluten-Free Recipes & Cooking Tips
Thanksgiving is my FAVORITE!!!! I've been doing my own Thanksgiving on Saturday for a few years now, so I can just bring my own food to family houses. Standard menu in the Bunnie household on Thanksgiving: Turkey mashed taters mashed sweet potato/squash casserole broccoli with cheese sauce garlic green beans stuffing gravy chebe rolls crescent... -
ARCHIVED Second Resurgence Of Hunger
JNBunnie1 replied to CGally81's topic in Coping with Celiac Disease
A number of people I know who work in the medical field call Centrum vitamins 'pan pills', because your body doesn't absorb them much and they just 'ting' in the pan on the way out. I'd say cod liver oil, a sublingual B complex, a probiotic, and a digestive enzyme (papaya pills) would serve you better. Basically, it doesn't matter what you put in your mouth... -
ARCHIVED Need Gluten/casein Free Biscuit Recipe
JNBunnie1 replied to DMarie's topic in Gluten-Free Recipes & Cooking Tips
I found a recipe for biscuits using shortening some time ago, and they were quite good, I will root around and try and find it for you. -
ARCHIVED Help! Questions About Green Bean Casserole, Canned Yams And gluten-free Brownies :)
JNBunnie1 replied to Jeanniebug's topic in Gluten-Free Recipes & Cooking Tips
As to the brownies, Bob's all purpose flour mix has bean flour, not something I recommend for the first few tries of a recipe, especially from Bob's. They stone grind their flours, which can turn bean flours rancid real quick. I'd say try Pamela's or gluten-free Pantry AP mixes first. -

I just quit sugar cold turkey for now, was getting very unhealthy. So WHY'D YOU HAVE TO GO AND POST A THING LIKE THAT!!!?!?!?!?!?!? -
I have SO MUCH sympathy for you!!! I actually spent yesterday in a similar state (I can blame you now, sympathy poo) and I wish I had seen this post yesterday, I would have told you to get some ointment for your butt. There was a funny story someone linked to once where the guy describes his colonoscopy prep and says 'his bowels traveled to the future and...

ARCHIVED Why Don't Fudgsicles Gluten Me?
JNBunnie1 replied to CGally81's topic in Coping with Celiac Disease
The consistent low level of gluten you've been ingesting (fudgesicles, fish with crackers, ice cream cookie sandwich) may be contributing to your constant feeling of hunger. Something to think about before deciding to be careless with the diet. -
Hey! Not an expert, but I would think that garlic first thing in the morning and the probiotic with a small afternoon snack would be optimal. As to the probitotic, my favorite is PB8, a relatively cheap, extremely effective probiotic that says gluten free right on the bottle!

ARCHIVED Big Bob's Cornbread Mix Review
JNBunnie1 replied to Ahorsesoul's topic in Gluten-Free Recipes & Cooking Tips
I've actually used Bob's cornbread mix countless times, it ALWAYS turns out perfect. I have to think either you had an expired mix or bacon and onions is a bad addition for the mix, it is a very sweet mix. I've actually found that it works best with the dairy free version, oddly. And it improves with time, it's always better the second day, when wrapped tightly... -

ARCHIVED Hunger Finally Going Away?
JNBunnie1 replied to CGally81's topic in Coping with Celiac Disease
It's easy to fall into the mindset of wanting your symptoms to match someone else's, or to match a list in a book. I don't think any two people have had the same recovery process. I only had outright symptoms for six months, but it took over a year for the hunger to go away. Don't worry, pretty much anything that happens is going to be perfectly normal, for... -
