  6. I was going to suggest this as well, I become lactose intolerant for a few weeks after being glutened, and had a few months where I went without dairy while recovering initially. Is he having a lot of painful cramping in his stomach and/or gas during these episodes? That would argue for the dairy issue. And ditto on the beautiful baby.
  7. That was exactly my reaction! I was hoping it wouldn't happen til I was 16, got it at 13. It's totally normal for your period to show up either way after everything else changes, or even before sometimes. Your body knows what it's doing, enjoy not having to deal with it while you can!
  8. There are gluten free frosting mixes in health food stores along with gluten free cake mixes. Remember, you can't use one of your baking pans, better to use a throwaway aluminum pan. If she can do dairy, a really good frosting is 1 package cream cheese, 1 container Ricemellow creme. It's the health-food version of Fluff, it's gluten free. I love that frosting...
  9. If you feel better, there you go. If you need some food ideas, go read the baking&recipes board, there's LOTS of awesome ideas. Congrats on the baby! And tell your aunt we think she rocks! And that Celiac is genetic, so she should get checked too. Preferably by a doctor that knows what they're doing.
  10. Along these lines, if you can find in a healthstore a bottle of mullein oil infusion (in olive oil) you can put a drop in each ear a few times a day and it will help kill and draw out infection. It feels icky but boy does it work.
  11. Ditto. That's why I didn't like Bob's Red Mill choc chip cookies. It works ok in the choc cake, because the choc flavor covers it up mostly, but the choc chip cookies have the most sugar per cookie I've ever seen and they're still funky tasting.

  13. Arrowroot and potato starch have always behaved well for me in subs for tapioca (when i run out). The only thing it wouldn't work for would be like a chebe type bread. I personally don't use soy by choice as opposed to necessity, and have never run across a recipe I couldn't just use sorghum or millet or some other flour instead. It does have higher protein...
  14. I don't want to sound preachy, but while you're healing, you need to make sure you get enough good dietary fats. Like organic meats and avocado and olive oil and fish and stuff. A good percentage of the vitamins you need are "fat-soluble", which means you won't be able to digest them without some dietary fat, so you'll stay malnourished. Honestly, cutting...
  15. Sorghum, tapioca starch, coconut flour, Arrowroot starch, millet flour. I tend to prefer the more nutrtious flours, and I'm rather anti-corn in general. A combo of any or all of the flours above works for everything I do. Does flaxmeal count as a flour, if you had to pick? In which case I'd replace millet with flax for certain things.

  18. It means I get the rash (among a host of other issues) when I get glutened. I thought that was pretty definitive, being that Dermatitis Herpetiformis is always a positive diagnosis for Celiac. And yes, my blood test and biopsies were all negative. Honestly, the only medical indication of Celiac I had was an abysmally low cholesterol level. I basically told...
  19. Idunno, I definitely have Celiac and I always tested negative anyway. I wouldn't trust it so much, I'd say try going without the beer for a couple months and then try, that would be a better indicator than tests that are historically undependable.

  24. I read that. Said he had a cholesterol level of 75 at one point. So did I. When I was sick with Celiac! That oughta tell you how stupid this low cholesterol 'movement' is.
