  1. I don't know much about the saliva test, sorry. "Gluten Free" means no wheat, no barley, no oats, no monosodium glutimate (msg), and some other lesser known grains. Many people with Celiac, also have other food sensitivites, and many fade as intestines heal. They can be, dairy or casien, corn, soy, artfical sweeteners, caffine, raw veggies or eggs...
  2. "Total villi atrophy" means she probally is not absorbing much nutrients at all and her intestines are pretty much useless. I'm really suprised she had no symtoms with that much damage.   5. mmm.. I'm lucky to have them nearby, My Parents live about 10 minutes from the bakery itself, but about 20 minutes from the "store front" that is a real bakery. They are moving to a new Facility soon! I love there bread and brownies! I reccomend their stuff 100%!

  8. That is exactly what i'm worried about! I don't plan on eating the corn stuff often, I don't like the digestive troubles, but If I get all down about the diet, or I need to just feel able to eat something "comfortable" (emotionally, not physically) I would rather turn to big old taco than a big old gluten filled bagel.
  9. That is what I was worried about, hurting myself. I won't be eating tacos daily...or weekly even. Just when I reallly need a fix. I feel so deprived already, I'm trying to pin down my "look-forward-to" meals. If I have some meals I LIKE, it makes eating all this other bland stuff not so bad.

I have been gluten free now for 17 days (yay!) and i'm starting to notice that my diet is sucking ( I eat more chocolate than willy wonka) and that i may have some issues with corn and artfical sweeteners.   11. I've always had a red blochy face. People always thought I was sunburnt, blushing, or ill! Yesterday a co-worker said to me "I noticed scince you started this diet, your not so red-faced anymore!" That made me blush, but he said that this was a differnt kind of red.   15. The nuts sound great, but i'm worried about dried fruit and the upcoming summer season... I will try to keep food in the fridge, but I have tendancy to eat them as soon as I can.

  22. My mom makes cakes for all her firends birthdays, and she made a ice cream cake for one of them who is GI and ever scince then it's her most requested type of cake!
