ARCHIVED Was I Glutened Or Is This Detox?
mftnchn replied to julirama723's topic in Coping with Celiac Disease
I think it could be detox and as the shifts in the diet and healing start occurring, you might experience a dying off of bad bacteria/parasites. YOu also could be experiencing a cleansing of the lining of the intestine. It forms more mucus to protect itself under the onslought of gluten and apparently can get some layers of stuff that don't clear out. ... -
ARCHIVED Potato Flour/starch
mftnchn replied to RiceGuy's topic in Gluten-Free Recipes & Cooking Tips
I can't answer all your questions but here potato starch is very similar to cornstarch and acts like that. Potato flour will act more like instant potatos when you use it. -
ARCHIVED Is It Possible?
mftnchn replied to Tamito's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Tanya, just one thought. You might find out exactly how the diagnosis was made when you were young. Just in case there was a wrong diagnosis at the time. I think it is good to go through the process of blood test and biopsy to double check. -

About toxic environments and illness... I met a young women from central Asia who grew up in a town near a large body of water that is drying up. She told me that for years chemicals were dumped into the water. Now if you look down from the air at the town everything is all white from "salt." The chemicals that were in the water have now entered the... -
ARCHIVED Specific Carbohydrate Diet (SCD)
mftnchn replied to AliB's topic in Food Intolerance & Leaky Gut
Coconut milk sounds so good. I think after I stabilize and heal a bit, I will try the fresh and see if I can tolerate it. I haven't done well with coconut so far. -
ARCHIVED Specific Carbohydrate Diet (SCD)
mftnchn replied to AliB's topic in Food Intolerance & Leaky Gut
Hi, Yenni. Reading the book is important, and then also check out www.pecanbread.com. The site has lots of options for casein free approaches. Also do read the section on yogurt. Many people have been able to reintroduce small amounts of goat milk yogurt after an initial period on the diet. Its fascinating that you figured out this worked for you... -
ARCHIVED Specific Carbohydrate Diet (SCD)
mftnchn replied to AliB's topic in Food Intolerance & Leaky Gut
It's a business trip for my husband for a group he consults for. There have been meetings all week and many of them I sit in on. However, yesterday all day was a wonderful outing. The chef prepared a lunch box for me, too! We got to take an elephant ride. It was up and down hills, not just a ride around a circle, LOL! Quite an experience! -

Susie, that's wonderful! So glad you have made it safely so far and now have some time to rest and prepare. Hi Jin and all! I'm doing well in Thailand, the chef has been wonderful and I've had a lovely variety of meals. One yesterday upset me, I think there was some nut flour in the fruit...but mostly all has been great. Sherry -
ARCHIVED Specific Carbohydrate Diet (SCD)
mftnchn replied to AliB's topic in Food Intolerance & Leaky Gut
Mia, my initial response was similar to yours, hang in there and hope the infection clears quickly. Yes, I wish I had started SCD much sooner too! I also think that the weight loss for me was mostly inflammation. Because it happened all at once (10 pounds) and then has been stable, I've also gain a little back. Susie, I think if you plan ahead so you... -
ARCHIVED Intestinal Healing Time
mftnchn replied to Ms. Skinny Chic's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I'm 18 months gluten-free and still have lots of ups and downs. I started SCD in July and it has also made quite a difference for me. Healing was slowed or prevented due to villi damage for me that prevented me from make carb digest enzymes. So eating carbs was causing more damage, lots of bacteria/parasites to flourish, etc. My genotype is associated... -
ARCHIVED Still Not Sure Whats Goin On Inside
mftnchn replied to jasonD2's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Jason, I have the same problem as you. And I agree, fiber makes it worse usually. I believe it is an intestinal motility issue, the smooth muscle just shuts down. A combo of Vit C and magnesium (very high doses) helped for me; I was gradually able to cut this back. Things have improved but still aren't great. Be sure your water intake is good and you... -
ARCHIVED How Do I Know?
mftnchn replied to jen-dakotaj's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Sorry for all you are going through. There are a good number of folk on this forum with negative tests but positive dietary response. Can you say more about your gluten free diet trials? How long? How strict? Did you consider cross contamination issues and eliminate those as well? It is possible that you will need to be gluten free plus something... -
Just a couple of comments adding to Rachel's ideas. The up and down dramatic swings were very like what I went through for quite a while after Gluten-free Casein-free. I improved after going SF, but still many ups and downs. I'd take a careful look at soy. I am glutathione deficient too, and in the summer started giving myself GSH injections. I notice...

Diagnosing and treating my vitamin D deficiency has been a huge help to me. If you are very deficient, sun exposure won't be enough to bring the levels back up but it will help. Vit D levels in milk are very low, so you'd have to drink 20 cups a day is what I recall... I recommend to all to have a blood level drawn, and then treat to bring up to current...

Welcome, Rowe! Stress impacts me too, I often have more symptoms after the initial stress is past, but yes, it can trigger a relapse for awhile. If you have to travel to see an LLMD, just remember it is hugely worth it to have a good doctor. Lyme treatment is unique to each of us even while there are some similarities. It is also very complex. Fortunately...

Susie, the fruit and honey might help versus pure candida approach. Nuts seem to help, too. -
ARCHIVED Specific Carbohydrate Diet (SCD)
mftnchn replied to AliB's topic in Food Intolerance & Leaky Gut
Hi Susie! I initially lost some weight...at about the 2nd week or third, but have since been stable. Also, I am still a bit over an ideal weight. Mainly I think it takes more effort to prepare foods especially at first, so it is easy to skip or not eat so much because it is too much effort. So I think good planning and putting extra food in the freezer... -

Quiet here today! I'm slowly improving after my recent relapse but it's very up and down. I'm enjoying my trip though. Can't wait for news of Carla's treatments. -
On the specific carbohydrate diet, bananas are one of the more easily digested foods. However, any of us can be intolerant of anything. I don't tolerate bananas well. I don't notice digestive symptoms but I don't test well for it. Years ago I tested it on an elimination diet and it made my resting pulse go up to 120!!!!

ARCHIVED Awaiting Test Results, Lots Of Questions
mftnchn replied to julirama723's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I think I would go for the biopsy option if I had the chance. With celiac, other conditions can occur due to the auto immune problems. You have a significant amount of symptoms. It would give you a baseline, in case further problems develop or the problems don't all resolve. In terms of diagnosis, it is the gold standard. However, you have a clear... -
ARCHIVED Specific Carbohydrate Diet (SCD)
mftnchn replied to AliB's topic in Food Intolerance & Leaky Gut
Seems like our degree of sensitivity is all different plus changes over time. So we each have to do the trial and error thing. Hope the starch doesn't bother you. Thnks, it has been lovely to have the nice meals and be able to participate with the group. -

ARCHIVED Specific Carbohydrate Diet (SCD)

Hello all. I'm in Thailand for a week, and was worried about the diet while gone. But the chef at the hotel where I am staying has been fabulous and I am enjoying a varied and tasty fare. He sat down for 2-3 hours with me to work things out, helped me get my yogurt started and has been fixing my meals himself. He's also gluten sensitive, so he understands...
