  2. I really like the pepto because for me it stops the pain very quickly and many times the pain doesn't return. That said you may want to check with your doctor as celiac is not the only reason for stomach pain. Other conditions independant of the celiac may be responsible.
  3. I agree with Jestgar. I am also an extremely senstitive celiac. I was also a professional chef in a restaurant that catered to folks with food sensitivities. The precautions that you mention taking would be sufficient for me to be comfortable eating your food.
  4. It sounds like you have a pretty good plan. I don't think sharing the oven would be an issue as long as stuff is not being cooked at the same time. I would treat gluten foods the same as you do you fresh meats in that I would keep them totally seperate from other items in storage or in your cooler.   7. And as you have undoubtedly read here before, barley malt when used as a flavoring agent can be listed under just natural flavors and not disclosed. When grain is added as a FILLER it has to be declared but not when it is malted and used in small amounts as a flavoring.
  8. The NIH actually does consider DH to be celiac disease. Gluten ataxia is also celiac disease. Celiac disease can manifest in more than just the gut.   10. When chicken has broth added it is not uncommon for barley to be used as a flavoring agent. You should always verify that it is gluten free. As mentioned whole unprocessed chicken is safe. It's what's in the added broth that can get you.

  16. I have to agree with the others. If your Ttg was 66 after 3 months gluten free I can only imagine how high it must have been beforehand.   18. You may very well be right that the proteins can be absorbed, I don't know perhaps my reaction does come from absorption as well as 'injestion'.   24. I don't know how far out of the way they are but all their safe name brand goods have a circle G on them. It makes buying canned goods, barbeque sauces, chips etc so much easier. I don't know what I would do without them. Might be worth the drive for you just for the time you would save reading labels.
