You need to let the dentist know about the celiac so they can check everything they use on you. Risks lurk in more than just the cleaning process and if you get a good dose of it when your gums are irritated it can have real bad effects. Let them know and make sure they check what they use. -

If you feel the need for the gluten challenge do it cautiously. As another poster said you would need to be consuming a fair amount over a 3 to 6 month period to get a possible positive result on the endoscopy. Your not being paranoid and getting some gloves is a good idea. Bird seed is also a source of gluten contamination. I can only answer from my own experience but for me hives were part of the skin effects I would get. Pressure from my clothes or just running a fingernail across my skin would raise big itchy welts. Pepto Bismal the pink liquid is gluten-free. For me when I get gluten related stomach pain if helps a great deal. It will make your stool dark so don't get upset if take it and notice this effect, it is normal.

I agree with Andrea. If you eliminated gluten and got better then got sick again when it was reintroduced you have IMHO all the proof you need. You do not need this doctor's permission to live gluten free and there are GI doctors who will diagnose based on a clear dietary response. I can only answer from my personal experience but when this happens to me I can usually link it to gluten sneaking in somewhere. There can be some false negatives with both the blood test and the biopsy. Have you thought about using Enterolab? In my opinion you should find out about whether you need to be gluten-free before the other surgery if you can. If you are aware of dreaming for a large part of the night you are not getting enough of the deeper levels of sleep. When we get a cold we do the usual more vitamin C, lots of liquids, rest and NyQuil. I know for sure the liquid for night time is safe but if you want to try the Dayquil call them to check if it also is safe. I hope you didn't gluten yourself making cookies and that your cold eases soon. -

Have you eliminated gluten from non food items as well? Things like shampoos and conditioners, lipsticks, lotions, playdoh, craft glues and pastes, drywall and compounds, paints, sharing a kitchen and utensils, pet foods and much more can get you. If you are still doubtful let your bodies reaction be your validation. Many times one challenge is enough for us to know for sure. You would need to eliminate the casein totally for a 2 to 4 week period first though. In answer to your second question the casein reaction they are testing for is an intolerance. It has reversed it for me. The bad news is that whenever I get glutened again that the hair loss returns for a couple weeks then stops again. I had to also check my shampoos and conditioners and such but it has helped. I take a strong vitamin specifically for hair and skin, gluten-free of course.
