I think the tests are a good idea but I would ask if he could do an endoscopy at the same time he does the colonoscopy. That way he can do some biopsies for celiac while he is in there. If you have been recently glutened maybe, but if your not used to being in the car a lot that could do it also. If you have to be riding a lot try to make frequent stops to get out of the car and stretch out a bit. If it is just red wine vinegar it should be gluten free as the only thing it should dervived from would be grapes.
