  1. Im sorry about you needing to go CF too. From what I understand, layman here, casein intolerance doesnt go away like lactose intolerance can. There are casein free and soy free chocolates out there. Enjoy life chocolate chips are really good. Ricera yogurt is okay for you but it does have a different texture, more like jello but with a good amount of probiotics...
  2. Thank you very much I started making them out of necessity for being dairy free than gluten free also and I found I really enjoy making them. I would love to take cake decorating classes but all the local classes use wheat flour. Im going to buy some books though to help hopefully and get more ideas.

  6. Congratulations what a great experience you will have! What areas are you going to? I know in Nicaragua it would be really easy to stay on a gluten free menu. Their diet consists of beans, rice and corn for the most part. I would try some spanish c.d.'s but down there it is a little different than Americanized Spanish.

  8. Thanks! I used dowels for each layer and one long one to go through the length of the cake and a few cake boards to help hold it up. I was so nervous putting the turrets in I thought for sure it would split.
  9. Thanks I used namaste chocolate cake mix and Energ egg replacer. I used three mixes (technically 2 1/2) for #3 10 inch by 2 inch layers and #2 6 inch by 2 inch layers.   12. Desitin is gluten free, Im not sure about a + d. We use it for other rashes that seem to pop up when she gets accidentally glutened. The overnight stuff works great for us.
  13. Yikes thats scary! I gave up most rice and rice milk and stay with potatoes quite often for a large part of my meals and only occasionally have rice.

  22. An option to gluten-free phyllo dough would be rice paper that is sprinkled with powdered sugar. Someone posted a recipe a long while back on how they made baklava with it. If you do a search I bet you'll find it. I would love to visit Greece myself, its a beautiful country.
