  1. I make mashed potatoe with Yukon Gold spuds (very flavorful, nice color), chicken broth (gluten-free, of course), a bit of rice milk and Spectrum non-dairy margarine. They're great (so say my 2 children, who are connoisseurs of mashed potatoes, lol!) Rhonda
  2. I say that you should trust your mother's instinct. You will be the one to pick up the subtle changes that occur when she first begins to present with symptoms. My dd hit a point (age 9 at the time), after a year or so of very subtle symptoms, when she seemed to tip over some threshhold and started getting worse very quickly. If celiac disease had been...
  3. That was *very* interesting. I find myself "somewhere on the gluten sensitivity spectrum" with you....along with my 2 children. We're all positive symptoms, positive Enterolab results, positive dietary response....but negative genes. My dh simply decided years ago that eating bread and pasta makes him feel "bad" so he eliminated such things from his diet...
  4. It took my dd a month or so to see marked improvement in that department. It took me several weeks as well. Hope you feel better soon.....hang in there!!! Rhonda (Rho)
  5. Chloe, I have to strongly disagree with you! Your wedding day is for YOU and your fiancee. There is plenty of naturally delicious gluten-free food out there (and casein free, if need be) and if you find a good caterer, they should be able to accomodate you without the guests even knowing that the food is gluten-free. I think back to my own wedding (18...
  6. That's kind of how I felt during my "detox" phase, when I first gave up gluten and sugar (at the same time, silly me.) I've also felt that way after a bad accidental glutening. It's never been a sustained thing, though....a few hours. It would be pretty freaky to feel that way for a long time. Are you experiencing this? Rhonda (Rho)
  7. That's a great idea! The book really covers it all. Convincing family members to get tested or take the diet seriously can be really shaky ground. My f-i-l is a walking laundry list of symptoms and associated conditions and he absolutely refuses to consider the fact that he probably has celiac disease. My b-i-l was just diagnosed and he's eating ...
  8. What a cutie! Congrats!!! Rho
  9. Laurel Springs is one that I've heard a lot of good things about. They will personalize your curriculum (vs a "one size fits all" approach.) I had looked into it last year, but for several reasons, decided to stick to our more traditional homeschool approach this year. I know that LS is used by young athletes and actors, in lieu of attending school, when...
  10. PF Changs just opened up at the Colonie Mall....I believe they have a gluten free menu. There's a restaurant near Troy (Rte 7 in Brunswick) called Sherry Lynn's Gluten Free Bakery and Cafe. I haven't been there yet, but have heard good things about it. I'll post more later if I think of something else. Rho
  11. Well....it's only anecdotal evidence, but in our case, they seemed to be accurate. Everything the tests "said" was supported by what we saw IRL. My dd was getting very sick, with horrible reflux, gas, bloating, D, decreased energy, pallor, dark circles under her eyes. Her pedi wasn't taking it all that seriously....just wanted to put her on meds for the...
  12. So true. I have been glutened by well-meaning people. I'm going to cook for myself and my two kids this year....we're gluten-free/cf/sf. My bro-in-law, who owns a restaurant and is a fabulous chef, is going to cook, but I don't think that he *could* adapt his recipes to our needs, even if he wanted to. I don't want my kids to feel deprived (nor do I want...
  13. The thing that helped me most when we first went gluten-free (my dd was also 9 at the time) was to get a copy of of Danna Korn's "Living Gluten Free for Dummies." It's an excellent "primer" on gluten-free shopping & cooking, tells you how to "de-gluten" your kitchen and even gives a few yummy recipes (the "Chex Mix" is a fave of my two kids.) It is...
  14. My b-i-l was just diagnosed (my in-laws are treating it as a "coincidence", as admitting anything more would mean they'd have to look in a mirror!) I had a phone conversation with him, and he said pretty much the same thing as your Dr. All he thinks he has to give up is beer, bread and pasta - and he thinks it's okay if he cheats from time to time ("It...
  15. I used to love the Kashi cereals! I haven't found an exact replecement, but I did find a cereal with a decent nutritional profile, that has a crunch. It's Nutty Flax (Perky brand.) I get it at my local health food store. They also make Nutty Rice, but it's not as nutritional (nor does it taste as good, IMO.) The Nutty Flax is in the form of little "balls...
  16. Hi! We live in Columbia County, southeast of Albany. We're in Albany at least 3 or 4 times a week for my kids extracurricular activities. I'm gluten-free, as well as both of my children (ages 10 and 12.) I do a lot of my shopping at Hannaford's, but have also been visiting the co-op in Albany (Honest Weight) every week or so. I think that there are quite...
  17. I used that method, but accidentally! I went gluten-free with my dd, ate that way for over a month, then went on vacation to (this is the ironic part) the west of Ireland. I consumed all the scones, soda bread and Guinness that I could hold....and was rewarded with shooting stomach pains, horrible bloating and C that took days to resolve.....oh, and a head...
  18. Check out this thread....maybe it will give you some inspiration! Open Original Shared Link Rho
  19. What?!! gluten-free, CF AND SF?!!! Doing a happy dance here! Rho
  20. All of the above are the possible down-sides of self diagnosis (IMHO.) That being said, myself and my two kids are self-diagnosed and doing just fine. My dd was the one with the severe celiac symptoms. Her pedi wrote "probably has celiac disease" on her chart, based on her symptoms, her Enterolab results, and most of all, her overwhelmingly positive dietary...
  21. Kaz, I buy Redbridge at my local Hannafords. You have Hannafords in Vermont, right? I was very shocked/pleased the first time I found the Redbridge there. They don't have a huge supply, but routinely have 2 or 3 sixpacks tucked in alongside the other Anheiser-Busch products. I think that Redbridge is pretty decent (also like New Grist, personally...
  22. Phone number is (518)279-9267. I haven't been there yet, but I'm hoping to soon. If you try anything from there, please give us a review! Rho

    ARCHIVED Stupid Doctor

I do NOT think that he was right. I think that he was waaaaaaay out of line suggesting something like that. If every one of us that has a genetic difference had our tubes tied, I'm guessing our species would die out. He can't know that you will pass these diseases on - there is, after all, another gene donor involved! Many people *with* celiac genes don...
  24. Definitely! I had mild body aches, a nasty headache, extreme moodiness and brain fog, even some mild intermittent nausea. It lasted the better part of 2 weeks, then slowly lifted. By the end of week 3, I felt much better. Both of my kids had similar periods of withdrawal, lasting around 2 weeks. Hope you feel better soon!!! Rho
  25. I use the whole bag - 10 oz. I just looked at the bag and there are no cup equivalents given. I'd *guess* that it's about 2 cups. Now I see that there's a recipe on back for "bark" made with the EJ choc chips and trail mix. Glad I looked at the bag!!! I'm getting holiday candy ideas..... Rho
