  1. I have used the shortening and it DID taste odd to me. I think that Jerseyangel's idea of adding the butter flavor is a good one. I have a new frosting these days - I make a ganache from the Enjoy Life chips and Pacific brand plain (or vanilla) rice milk. IT'S SO GOOD! I just pour the chips into a glass bowl, heat the rice milk (1/2 cup) on the stove...
  2. I'll second that! Tom Sawyer flour is the key to my great pancakes (mixed with some teff flour to increase the nutritional content.) The results of everything I'd tried before just didn't compare to the pancakes I made pre-gluten-free....now they do!! Rho
  3. I think you can get firm abs again....I've had 2 kids and was bloated for years, but my abs are in pretty good shape these days. At least 3 times a week, I do a series of ab exercises (usually after a 30 - 40 minute cardio workout.) I do: 50 crunches s-l-o-w-l-y (I think it makes a big diff to do them slowly, so that you can feel that you're targeting...

  7. The only bread I buy any more is Glutino's Fiber Bread. We never ate white bread before going gluten-free, so I was looking for something that was more whole-grainish. I like the taste of this bread, but nutrition-wise, it's not that great, despite the name. When my store runs out of the Fiber Bread, I have purchased the Flax Seed Bread. My kids don't...
  8. Our experience was good. My dd had big time GI symptoms - reflux, gas, D, bloating - and she was becoming pale, with a low energy level. We'd already taken her gluten-free, just to see what would happen - and she improved so quickly that we decided to just keep her gluten-free. We did the Enterolab test "just to see" and it only showed us what we already...
  9. That's how I feel. I've lost 17 lbs (and counting.) I'm assuming that it's just the diet. I do work out, but no more than I did before. It's unsettling to lose weight so quickly. I got a complete physical a month ago....everything looked fine. I'll be interested to see where this levels out. Rho
  10. Yes, definitely! I eat way less sugar in general, now that I'm gluten-free. So do my kids. That really shocked me. My ds was a junk food junkie - loved potato chips, donuts, cookies - and would eat to excess if I didn't watch him.   17. It took 2-3 days to get the tests from Enterolab, then a couple of days on our end to get things "collected", then we overnighted (via UPS) the stuff back to them. After they received the samples back, it took 2 weeks for the results to show up in my e-mail inbox. So the whole procedure, start to finish, took us just under 3 weeks. Rho

  19. Michelle, I had a "detox" period when I gave up gluten, and it lasted for a couple of weeks. At the worst of it, I had body aches and an awful headache, like I was getting the flu. I felt vaguely nauseous, had no appetite, and had a head fog as thick as pea soup. Then one day, near the end of the second week, it all lifted and I started feeling better...

  23. I'm in NY State (southeast of Albany) and our leaves are changing quickly now. The eves have been much cooler. I cooked my first pot of chili and made some gluten-free gingerbread last week....so it must be fall, lol! (As soon as I buy a bag of gluten-free candy corn, I'll be 100% into the spirit of it!) Rho

  25. That's a very good question. My dd's reflux symptoms (main GI problem) started after she got braces and I wondered for a while if the braces were causing the reflux. Later we figured out that she had a gluten intolerance, though....and she continued to get worse when the braces were removed, so in hindsight, I don't think the braces had anything to do with...
