ARCHIVED How You Found Out Your Child Had Celiac
cruelshoes replied to kimis's topic in Parents, Friends and Loved Ones of Celiacs
We screened all of our kids as first degree relatives immediately after I was diagnosed. My son was positive. He had no outward symptoms. However, his biopsy and bloodwork were nearly as bad as mine were. I was near death and getting fed through an IV, and he seemed fine. But he was well on his way to being a very sick little boy. When we told him he... -
ARCHIVED Refractory Celiac Disease
cruelshoes replied to beachbel's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
The test that will show you if you are still consuming gluten is the antiGliadin IgA. The result should be as close to 0 as possible. I don't see that test in the list you posted. Your TtG IgA is definitely positive, but as I posted above, that can be related to other things. Definitely follow up with your doctor. Are you still experiencing symptoms... -
ARCHIVED Refractory Celiac Disease
cruelshoes replied to beachbel's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I have difficulty telling from your original post which bloodwork you have had done as a followup, or what your levels were. It is important to note that simply retesting the TtG is not adequate. Please see below: Open Original Shared Link -
ARCHIVED In Need Of A Pie Crust Recipe
cruelshoes replied to WardGirl's topic in Gluten-Free Recipes & Cooking Tips
I have frozen it a bunch of times. I usually make a 2x or 3x batch, divide it into balls, wrap each ball in plastic wrap and put all the balls in the freezer in a gallon sized ziplock. Thawing the frozen balls in the refrigerator overnight works great for me. Freezing/thawing doesn't seem to change the taste or texture. Happy baking! -

ARCHIVED They Changed My Cereal.
cruelshoes replied to Chicklet's topic in Gluten-Free Foods, Products, Shopping & Medications
Chicklet - it is entirely possible that the cereal has not changed at all, and it is only a change in the packaging. Here in the US, the Government is still working out what Gluten Free means. As of this moment, there is no standard. Many manufacturers have changed thir packaging to say made without gluten ingredients or wheat free because they are waiting... -

I know it's not what you asked, but... I use my pressure cooker to make rice. I can cook perfect brown rice in 20 minutes, and perfect white rice in 8 minutes. It is fantastic and quick, and always cookis out great made with either broth or just plain water. So if you have a pressure cooker (also great for all kinds of meats, beans, etc) you might give...

ARCHIVED Class Halloween Party
cruelshoes replied to mmcdaniels's topic in Parents, Friends and Loved Ones of Celiacs
You are doing all the right things by volunteering to help with the party and scooping your son's portion out first. You might conveniently volunteer to set up the toppings so that the gluten stuff is one one side of the table and the gluten-free stuff is on the other. The other mom wants to do things her way, so you are probably better off not fighting... -
ARCHIVED A.r.b.o.n.n.e
cruelshoes replied to Jenny (AZ via TX)'s topic in Gluten-Free Foods, Products, Shopping & Medications
I just clicked on an A/R/B/O/N/N/E ad on the side of this page to come up with this list. Open Original Shared Link Seems odd that they would be tagged with lame advertisement when they are an advertiser. HTH. -
ARCHIVED Unflavored Gelatin
cruelshoes replied to GlutenGalAZ's topic in Gluten-Free Recipes & Cooking Tips
Gelatin adds extra protein (helps loaf stability and promotes elasticity to your recipe), and reduces crumbliness. You may be able to leave it out, it really depends on the recipe. I usually use it when a recipe calls for it. -

ARCHIVED Sanity Check: Validity Of Enterolab
cruelshoes replied to climbmtwhitney's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Actually, that article is Dr. Fine talking about himself. Scott may have included it in his newsletter in 2004, but the words are from Dr. Fine about Dr. Fine. Probably not a great deal of objectivity there. All we have to say whether Enterolab's results are valid is our own opinions. Since they have never published their results, we do not have... -
We are planning a family trip to Blanchard and Sandpoint, Idaho as well as Spokane, WA in the next few weeks. Does anyone have any recent experience traveling to these areas? I would love to know what restaurants, groceries and bakeries are in the area. We will be packing most of our own food, but you never know when a food emergency might arise. Thanks...

ARCHIVED How Are You Preparing For The Economic Collapse?
cruelshoes replied to GregC's topic in Introduce Yourself / Share Stuff
A decent supply of food storage can provide ecomonic as well as emotional security. I used to have a years supply of food back when I could store wheat, but it has become much more difficult with all the different flours I use now. I probably have 3 months worth now, with a goal of getting back to a years supply. If you think about it, food storage allows... -
ARCHIVED Egg Replacer...how Well Does It Work?
cruelshoes replied to RissaRoo's topic in Gluten-Free Recipes & Cooking Tips
Eggs serve multiple purposes in recipes. They are many times a binder or a leavener. In my experience, Ener-G egg replacer works in recipes where eggs would be a leavener, and not very well in recipes where eggs are a binder. -
ARCHIVED Question Bout Gluten Intolerance
cruelshoes replied to jasonD2's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
