ARCHIVED Your Moms Pie Crust
Ginsou replied to melrobsings's topic in Gluten-Free Recipes & Cooking Tips
I recently made a 2 crust pie using the Bette Hagman recipe, and it was excellent. It was a flakey type crust, (I used Spectrum)which is what I prefer. I also refrigerated the dough, and after 30 minutes in the fridge tried to roll it out.....it refused to roll and would not stay together.I don't like cold weather and neither did the dough. I live at 4,... -
ARCHIVED gluten-free, Df, Sf Pastry And Baking
Ginsou replied to Gwen B's topic in Gluten-Free Recipes & Cooking Tips
I used cold Spectrum as the recipe that I was using suggested. However, measuring cold shortening is a bit tricky. Next time I will measure soft shortening, and then refrigerate it for a bit. I also used a mixer. Perhaps you should try another recipe for now, but don't give up on the Bob's Red Mill yet. I have their recipe, but have not used it yet. -
ARCHIVED Dont Want To Go Grocery Shopping? But Need To Cook?
Ginsou replied to ShayFL's topic in Gluten-Free Recipes & Cooking Tips
I'm on my way to Largo, FL for a few weeks, and am trying to NOT have to go into Tampa for special ingredients. I'm getting better and better at being able to go to a supermarket and find things I can eat. Don't get me wrong, I LOVE Whole Foods and usually stock up on things, but when traveling, have to re-adjust my life. I always bring along Tinkyada... -
ARCHIVED gluten-free, Df, Sf Pastry And Baking
Ginsou replied to Gwen B's topic in Gluten-Free Recipes & Cooking Tips
I've also had very good luck with it. Because of my multiple food allergies, this is the only product I can use. The other day I made an apple pie, the first pie I have had in over a year! I used a recipe from Annalise Roberts. My gluten eating husband ate more than his share of the pie, it was that good. If anyone out there has had an apple pie from Julian... -
ARCHIVED Df Whipped Cream Substitute
Ginsou replied to Sweetfudge's topic in Gluten-Free Recipes & Cooking Tips
My year long search for an acceptable (dairy, soy free)whipped cream topping has just ended, thanks to Mango04!! I finally was able to try this, the consistency and taste were more than I had hoped for. After beating, it looked a bit "soft set", and I added a small amount of cornstarch. Put it in the frig, and an hour later, could not tell the difference... -
ARCHIVED New Cookbook From Annalise Roberts
Ginsou replied to jkmunchkin's topic in Gluten-Free Recipes & Cooking Tips
I have her original cookbook, and her recipes really ARE wonderful. I just placed an order for her updated book. She recommends (and reviewers of her recipes also recommend) using Authentic Foods Superfine Brown Rice Flour. I have always used Bob's Red Mill brown rice flour in her Chocolate Chip cookie recipe and they are the best ones I have tasted so far... -
ARCHIVED Gross Question..sort Of
Ginsou replied to givenupgluten's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
It means they float before the toilet is flushed. Several times in the past few years I have had a few "floaters" and once passed some foamy looking stuff. Since it doesn't happen all the time, I wouldn't worry about it. If it happens on a regular basis, then I'd mention it to your doctor. -
Right after I replied to this topic, I opened up the Sunday newspaper, and low and behold.....a coupon good for $1 off two boxes of Chex cereal!

ARCHIVED Looking For Good Recipes Using Fresh Ginger
Ginsou replied to Sweetfudge's topic in Gluten-Free Recipes & Cooking Tips
I also have a soy allergy.....allrecipes.com has a soy sauce substitute, cooks.com has a soy sauce substitute, and chinesefood.about.com has one also. The basic recipes use molasses, vinegar, sesame oil and beef broth. Make sure the beef broth is gluten free! Here's the recipe from cooks.com: Soy Sauce Substitute 1 1/2 cups boiling water 4 Tablespoons... -
I've also purchased a box of Rice Chex because of the info on this forum saying it is gluten free. I ate it, and didn't get sick. I've also thought of contacting the company to thank them for making this product available.....heck, maybe they will give me a coupon towards another purchase!!

ARCHIVED Celiac Disease On Medical Alert Bracelet
Ginsou replied to simplicity66's topic in Coping with Celiac Disease
Ummmmm I'm curious...where was that gluten free lunch served? I've learned not to trust anyone except myself when it comes to eating. I was ill for a week after eating with family. My daughter-in-law to be used rice milk for the potatoes, but put in margarine (I'm also dairy and soy intolerant). The steaks were marinated in a sauce that contained soy. -
ARCHIVED Df Whipped Cream Substitute
Ginsou replied to Sweetfudge's topic in Gluten-Free Recipes & Cooking Tips
Mangoo......thank you, thank you, thank you! What a great idea to use coconut milk. I am lactose intolerant, allergic to milk, soy and casein and this sounds like the best substitute. I have tried some recipes using Vance's and Better Than Milk and they were not good at all. My solution at the time was to make meringue and that was the closest I could come... -
ARCHIVED What's A Good Gluten Free Cookbook?
Ginsou replied to jjc's topic in Gluten-Free Recipes & Cooking Tips
Since developing Celiac and other food allergies in the past year, I have purchased quite a few cookbooks. My favorites are Mike Eberhart (Sure-Talent Books) Gourmet Desserts....a photo of every recipe is in his book, Donna Washburn/Heather Butts cookbooks, and Annalise Roberts. I like books that have photos of the finished product. I also have Bette Hagman... -

ARCHIVED Arrowroot Substitution?
Ginsou replied to IMWalt's topic in Gluten-Free Recipes & Cooking Tips
Cornstarch and arrowroot are thickeners and can be interchanged one to one. I personally have not had any experience substituting these ingredients, but all my cookbooks say they can be substituted. -
ARCHIVED Bobs gluten-free Oats
Ginsou replied to LuvMoosic4life's topic in Gluten-Free Foods, Products, Shopping & Medications
I also have had the constipation problem my entire life, even before being diagnosed lactose intolerant, and this past year, a multitude of intestinal problems....milk, soy, gluten, casein, etc. Lack of fiber is not the problem...I exist on fiber. I have discovered that my system responds very well to a daily breakfast or snack of Perky's Nutty Flax cereal... -
ARCHIVED Computer Shuts Down By Itself While On Forum.....
Ginsou replied to DingoGirl's topic in Board/Forum Technical Help
I also had trouble with my computer.....but only while on this forum. ARCHIVED Hellmans/best Foods Canola Mayo
Ginsou posted a topic in Gluten-Free Foods, Products, Shopping & Medications
Well, like so many other celiacs, I have a severe soy problem. I am sitting here at the table with 2 jars of Best Foods Canola mayonnaise. One label says : natural flavors (soy), the label on the other jar says natural flavors. I was estatic when soy was not listed....but am having second thoughts. Soy is a killer for me. Guess I'll go back to the $7.65 bottle... -
ARCHIVED Is Rice Dream gluten-free Rice Milk Really gluten-free Now?
Ginsou replied to Gwen B's topic in Gluten-Free Foods, Products, Shopping & Medications
Well, I'll be.....I just started purchasing Rice Dream again because about 6 months ago some travel packs listed barley as an ingredient, so my husband drank them. I had been using Rice Dream for a while....even tho it was labeled gluten free, after about 6 weeks I began getting sick and for the life of me could not understand why. Two days ago I purchased... -
ARCHIVED Several Celiac Symptoms...could Be Lifelong - Please Advise!
Ginsou replied to Kitt1027's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I'm not 100% sure, but I believe the grilled chicken is the culprit at Wendy's. Go to the supermarket and look at the ingredients on those convenient grilled chicken strips...Tyson, etc. ....all have wheat in them!! Hormel is the only wheat-free chicken strips I have been able to purchase without wheat in them. Not easy to find. I used to buy Louis Rich chicken... -
ARCHIVED Depressed--tests Came Back Negative
Ginsou replied to samcarter's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I hear what you are saying...and feeling. After being sick for 4 months and in a lot of pain 24/7, I went to a gastro nurse practioner who thought I had celiac. She told me right from the beginning that blood tests are not guaranteed. I had the blood tests done for celiac and h.pylori. I was stunned when they came back negative! And depressed! I had no insurance... -
CeliacAlli.....was the cookie recipe you referenced the Vanilla Almond sugar cookie recipe? I've been wanting to try that recipe....am allergic to soy so will try using rice or almond milk.
-
There's no way I would eat gluten again to have tests done. I ate cookies containing gluten for 2 days before having blood tests for celiac....and the tests were negative. I ended up in the emergency room about a week later in severe pain, and all tests were negative. Enterolab tests were positive and other food problems were discovered. I'd cancel the...
