A bread machine that has a gluten free setting means that there is only 1 rise....that is all that is needed when making gluten free bread. Non gluten-free settings usually have 2 and sometimes 3 rise cycles. I have a container of Better Than Milk Rice (Vanilla) mix that I use on occasion. It lists Maltodextrine (from corn) as an ingredient,also food starch-modified (from corn) so this product would not be something that you could use. I'm also dairy/soy intolerant and use Nutiva coconut oil as a substitute for butter on veggies.I've tried several brands,and this is the most flavorful for me. I miss seeing the geographical location of the members...sometimes it helped prompting a reply as to availability of products, restaurants, doctors, etc. in their area. I also had symptoms after eating shrimp and drinking 2 buck chuck white zin a few weeks ago. This was at a potluck, and I thought perhaps the shrimp may have had something in it....it was purchased cooked (I did not purchase it). We have 1 bottle of chuck white zin left, so perhaps I will try it again and see if I get sick. I'm not allergic to shrimp. -

I'm also a dedicated Udi's fan. I spend the summer in Colorado and brought back about 5 loaves of bread that are now almost gone. I also cannot use the BC cookie mix because of additonal allergies. I recently made chocolate chip cookies using Namaste cookie mix, added Enjoy Life chips (allergen free) and they came out spectacular. I used canola oil for the shortening.
