Enterolab says their tests are sensitive enough to detect antibodies in stool samples up to 2 years after someone stops eating gluten. Usually new celiacs have enough 'slips' or accidental gluten, that the sample has plenty. I sent my sample almost 3 months after I stopped eating gluten. I STILL had a positive test. Scratch or patch tests don't test for foods we eat. Those only show how our skin reacts to substances. We don't put food under our skin. We put it into our stomaches which sends it on to our intestines which produce antibodies which leak into our blood. I LIVE in Seattle and bought Seattle Sorbet at my local Whole Foods. I like the taste but didn't like the texture (too icy). I did not react to those with my 'gluten contamination' symptoms. Marissa: YES! The magnesium aspartate with potassium helped a LOT. I'm still using that to stay 'regular'. Most celiacs have huge magnesium deficiencies which affects regularity (as either diarrhea or constipation). Rather than adding more fiber to your diet, I suggest you take Magnesium supplements. Magnesium draws water into the stool and improves smooth muscle coordination (gut motility). Ener-G Foods' Corn Loaf is gluten, dairy, soy, egg and sugar free. and fantastic. My husband tried an Ener-G foods bread sampler pack and loved Corn Loaf much more than other NRG bread products.
