  1. After I was diagnosed with celiac disease and then 6 other delayed reaction (IgG or IgA mediated) allergies, I went through a 5 year period of getting colds (and gastrointestinal infections) more and more frequently. I found a holistic doctor who was willing to find causes of my lowered immunity. Through tests she found my white blood cells were abnormally...
  2. There are just as many celiacs with constipation as diarrhea. However most doctors rigidly hold onto the classic profile of celiac symptoms as diarrhea, short stature, bloating and fatigue. Your doctor would profit from keeping your son eating gluten and testing him every few months, but your son wouldn't benefit whatsoever. His life is difficult enough with...
  3. Did your doc check your thyroid antibody levels (Thyroid peroxidase antibodies or TPOab)? What were results of tests for your other thyroid hormones like free t3, free t4 and reverse t3? What you described with a high TSH and then a later low TSH alongwith an enlarged thyroid could be the result of thyroid antibodies destroying your thyroid gland. The...
  4. I've had good results with the IBS Treatment Center in North Seattle. (Rather than diagose your symptoms as "IBS", they look for causes of IBS symptoms, which they believe are caused by gluten intolerance, other food allergies, gut dysbiosis or bacterial, parasitic or fungal infections, among other things). My current doctor is affiliated with the Tahoma...
  5. The last time I got gluten cross-contamination was after eating 2 corn tortilla chips which were fried in the same oil that flour tortillas had been fried in. I was sick for 3 weeks with excruciating cramping gut pain, bloating, nausea, etc. That was October 2005. I haven't had a gluten reaction since. However, I've accidentally consumed tiny bits of each...
  6. How old is your egg replacer? If you're using egg replacer which is past the expiration date, your bread won't rise as much. (Been there, done that. lol) I tend to use egg replacer in recipes where I don't have lots of little grainy things in my bread. However, if I'm doing a mock rye with caraway seeds or dark grained breads (w/ buckwheat or teff flours...
  7. Which blood test were you given? (RAST? ELISA?) Did it look for IgG or IgA mediated allergies? Those are delayed reaction allergies which are common among people with celiac disease. Some tests only look for IgE mediated allergies, which are anaphylactic and immediate, not delayed reaction like gluten intolerance. BTW allergies do involve an immune reaction...
  8. After I was diagnosed with celiac disease and casein allergy, I abstained from those and also had continual gut pain. Later tests diagnosed 5 more delayed reaction (IgG and IgA) food allergies. Abstaining from those foods helped somewhat. However, continual gut pain influenced me to request tests for gut bacteria, parasites and yeasts. Over a 4 year period...
  9. I no longer have to make my own mayonnaise from cashews. Earth Balance and Veganaise both offer dairy/soy/egg free varieties of mayonnaise. I've used both and the tastes are similar. So I'll buy whichever is the best price next time. So nice to have more egg/soy/dairy free products to sub for egg products.
  10. I can tolerate all kinds of beans and/or bean dishes, as long as they don't contain any of my diagnosed allergens. However, I used 'Beano' to digest beans and other 'gassy' vegies (like brocolli, onions, etc.) before meals, UNTIL Beano started adding an alcohol sugar (mannitol?) to their ingredients. I can't tolerate any alcohol sugars due to leaky gut issues...
  11. Some celiacs (including me) had constipation, rather than diarrhea, as their chronic symptom. I also had cramping pain and bloating. 4 years after I was dx'd with celiac, I was dx'd w/ Hashimoto's hypothyroidism, which commonly occurs among people w/ gluten intolerance. Because my doctor rigidly used the classic profile for celiac (diarrhea, short, thin...
  12. Gluten intolerance definitely affects the thyroid. Hashimoto's thyroiditis is the most common form of hypothyroidism (low thyroid function which decreases metabolic processes). Hashimoto's is highly correlated with gluten intolerance. Although your doctor said your thyroid was 'fine', ask for a full panel of thyroid tests (free t4, free t3, TPOab ...
  13. I had c-diff after taking antiparasitic drug alinia for cryptosporidia and antibiotic herbal supplement caprylic acid for klebsiella and later enterobacter cloacae over a 3 year period. So my good bacteria were very depleted despite taking a high dose probiotic after each treatment. My doc intially treated my c-diff with flagyl, but c-diff recurred, probably...
  14. I love buckwheat (not from wheat) in pancakes and yeast breads. I recently made a great tasting/textured bread from buckwheat, cornmeal, sorghum, millet, potato starch and tapioca flour. It tasted just like I remember rye bread tasted. If you want a safe substitute for oats, I used quinoa flakes, before certified gluten-free oats were available. I didn...
  15. If your specific gut bug (bacteria or parasite) was not sensitive to (killed by) Rifaxamin, you just get the side effects of that drug w/o killing your gut bug. As much as drug co's want doctors to believe their antibiotic (esp. Rifaxamin) is 'all-purpose', you really need a stool test which identifies your bug (hopefully by DNA) and recommends which drugs...
  16. After I was dx'd with celiac disease and casein allergy I went gluten/casein free. Symptoms continued. I soon suspected and stool test later confirmed soy intolerance. 2 years later ELISA tests confirmed 4 more delayed reaction (IgG mediated) food allergies. During the 4 yr period after my celiac disease I was tested for, dx'd with and treated for 8 different...
  17. I also had impaired digestion after eating gluten free and even after being dx'd w/ 6 other food allergies and abstaining from those allergens. Before I was dx'd w/ Hashimoto's I felt overly full after eating very little and had chronic constipation no matter what else I ate, drank or did. After my Hashi's dx I took 16 months to understand which and how...
  18. Enterolab usually includes an interpretation with your test results. That should answer your questions about the gene test. However, you can also call or email the lab and ask questions. They were very helpful with answering my questions.
  19. I have done breads (pizza yeast dough, buckwheat/corn (mock rye) yeast bread, and many different quick breads) as well as heavy cooky doughs with my Sunbeam mixmaster (standing). I need the counter space for my other appliances. So I appreciate my lightweight mixer. My old Sunbeam hand mixer lasted 40 years and still works for light weight beating (whipped...
  20. I don't do well with gluten free processed foods either, because I have allergies to most common ingredients (dairy, soy, eggs, cane sugar, vanilla and nutmeg), which are contained in most gluten free processed 'treats' and/or condiments. So I stick with naturally gluten free fresh vegs, fruits, meats, poultry, fish, legumes and nuts, as well as gluten free...
  21. Before I was dx'd with Hashimoto's, I also had many other typically Hypothyroid symptoms (like fatigue, low core body temp, loss of outer edge of eyebrows, etc.). However, I attributed the fatigue and eyebrow loss to age and had been cold when everyone else was warm all my life. The only bothersome symptom was constipation. Many people with undiagnosed Hashimoto...
  22. I never had diarrhea before I was diagnosed with celiac disease. I had chronic constipation, bloating and gut pain. However, going gluten free and then eliminating my other 6 diagnosed allergens did not affect my constipation. I had to keep doing the high fiber, lotsa liquids, magnesium, probiotics, etc. routine to have regular (albeit hard) stools every...
  23. I have eaten BRM 'Mighty Tasty' hot cereal at least 3x a week for the past 7-1/2 years and never reacted. I'm one of those 'super sensitive' types who get excruciating gut pain for about 3 weeks after consuming a bite of gluten containing foods. However, I also tested for other delayed reaction food allergies (Enterolab and ELISA tests) during the first ...
  24. I discovered 2 great allergy free baking books before the holiday season. So I decided to get a heavier standing mixer, rather than try to use my old (rather weak) hand-held mixer. I debated over getting a Kitchen Aid, because one baking book author recommended the 'paddle' attachment for mixing baked goods. However, the other author didn't. I don't have...
  25. My casein reaction symptoms are sinus congestion and drainage, bloating and excruciating cramping intestinal pain (more like menstrual cramps than my gluten reaction). When I first began to abstain from casein and accidentally consumed dairy, my reaction symptoms lasted 7-10 days. Years later, when I accidentally consumed casein, my reaction symptoms lasted...
