The What's For Dinner Tonight Chat
burdee replied to jess-gf's topic in Gluten-Free Recipes & Cooking Tips
I'm thawing and heating (microwaving) leftover homemade clam chowder with homemade buckwheat corn (yeast) bread. Our dinner will match the weather, which was 6-8 inches of snow fall today and a high of 29 F. That's not typical Seattle weather, but I love walking in the snow. Just wish I had some cross country skies, like everyone else around here. -
ARCHIVED How Did You Treat Parasites?
burdee replied to AmyNColorado's topic in Related Issues & Disorders
I agree. I was diagnosed via stool test with cryptosporidia and treated with alinia. Later I was diagnosed with dientamoeba fragilis, but my ND still wanted to treat me with Alinia, even though that drug was not recommended for D-frag. Some docs get stuck on one drug for everything. So after 2 unsuccessful treatments with 2 different drugs, I found another... -
ARCHIVED Low White Blood Cell Count
burdee replied to CarolinaKip's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Yes, my WBC was below normal (3.2 when normal range was 4.0-10.7) after 4 years of taking antibiotics, antiparasitics and antifungals for 8 different gastrointestinal 'bug' infections. Some of the drugs I took were notorious for lowering WBC (Vancomycin for C-diff and Iodoquinol for Dientamoeba fragilis). Symptoms of WBC for me were getting one respiratory... -

We're having Applegate Farms chicken and apple sausages cooked with saurkraut, apples, apple juice and cinnamon with leftover sweet potatoes (mixture of yellow, orange and purple). We have the sausage and saurkraut dish at least once a week, because my husband has German heritage and I lived in Germany for 2 years and love sausages. (I make enough for 4... -
My husband and I (both gluten intolerant) have been eating gluten-free oats regularly since they first came out several years ago. I'm a supersensitive (react with excruciating gut pain) and my husband reacts to gluten CC with joint pains. We have never reacted to Gluten Free Oats of any brand.

ARCHIVED Freezing Single Batches Of Leftover Soups
burdee replied to researchmomma's topic in Gluten-Free Recipes & Cooking Tips
I freeze single servings of homemade soup all the time. I use Corningware Petit pans which you can freeze and then thaw and heat in the microwave. Each holds 1-3/4 cup volume. I pour the soup into the petit pan leaving about 1/4-1/2 inch at the top for freezer expansion. Then I cover the pan with plastic wrap (or wax paper) and put on the lid and freeze.... -
ARCHIVED Bob's Red Mill Pizza Crust Mix
burdee replied to BabsV's topic in Gluten-Free Foods, Products, Shopping & Medications
I can't use the BRM pizza dough mix, because it contains cane sugar. I have a diagnosed allergy to cane sugar which causes me palpitations and nausea. So you could be allergic to almost anything. OOOPS. Just noticed you used real mozzarella cheese on your pizza. What about dairy or casein? That's a common delayed reaction (IgG or IgA mediated) allergy, more... -

Yes, I loved the taste and texture of my bread, which tasted more like pumpernickel than rye. I was a bit disappointed that the bread didn't rise more, but it did double in size. So I guess it did what it should. Next time I'll try a different recipe from that book (The Allergen-Free Baker's Handbook by Cybele Pascal) and see whether the same thing happens... -

I avoid any of Amy's foods which contain my diagnosed allergens. So any Amy's food that are free of my allergens don't bother me at all. I often wonder, when people talk about CC from products, if they really have other undiagnosed allergens, besides gluten intolerance. I've only had one CC incident (from gluten) in 8 years. That occurred at a Mexican restaurant... -
I had dry eyes, mouth, etc. for years. I was diagnosed by an opthalmologist with 'dry eye' syndrome years ago and prescribed artificial tears, which I used frequently throughout the day. I drank liquids constantly, because my mouth was dry. I didn't hear about Sjogren's Disease until after I was diagnosed with celiac and started reading about other diseases...

The What's For Dinner Tonight Chat
burdee replied to jess-gf's topic in Gluten-Free Recipes & Cooking Tips
No yet. Still waiting for it to finish rising, baking and cooling. LOL I probably wouldn't have had to wait so long if I weren't allergic to most common baking ingredients (dairy, soy, egg, cane sugar, nutmeg and vanilla) as well as gluten intolerance. Fortunately I recently found a great baking book which excludes 5 of my 7 allergens. -

Hot from the oven homemade buckwheat/corn/caraway seed bread (mock rye) with Amy's Lentil Vegetable soup for dinner. Fortunately my husband loves soup. (I made clam chowder from scratch last night.) This is my first attempt at homemade gluten-free yeast bread. After all the work to make the bread, I will just open cans of soup. Mine will be the Amy's with... -
ARCHIVED Weird Reaction After Adding Back Grapes
burdee replied to allergyprone's topic in Food Intolerance & Leaky Gut
Which food allergy test did you take? Skin tests don't work for food allergies, because we don't put food under our skin when we eat. Some tests only look for IgE or immediate reaction allergies. Most food allergies are delayed reaction of IgG or IgA mediated allergies. -
ARCHIVED Weird Reaction After Adding Back Grapes
burdee replied to allergyprone's topic in Food Intolerance & Leaky Gut
We grow our own grapes and don't bother with sulphites or pesticides. My husband (who was diagnosed by blood test) still reacts to eating our home grown grapes. So there are some true grape allergies, unrelated to sulphites. -
ARCHIVED Weird Reaction After Adding Back Grapes
burdee replied to allergyprone's topic in Food Intolerance & Leaky Gut
My husband and I took the ELISA test for delayed reaction (IgG mediated) food allergies. He tested very high for grapes. Before he abstained from grapes, he got frequent migraines. After he stopped eating grapes, no more migraines. Then we had a bumper crop of grapes from our arbor. He ate a lot of grapes one day. The next 2 days he had terrible migraines... -
ARCHIVED Which Is Easier For You: Dairy Or Gluten Free?
burdee replied to JWSJ's topic in Coping with Celiac Disease
Soy was difficult to give up for me until Earth Balance came out with a dairy/soy free buttery spread and later a soy/egg free mayonnaise. Then I found Daiya dairy/soy free cheese. Then Amande made dairy/soy free yogurt. Best of all we found coconut aminos, which tastes just like soy sauce, without the pain and bloating reactions I got from soy sauce. What... -
ARCHIVED I Need Suggestions For Dietary Fiber Supplement
burdee replied to cahill's topic in Gluten-Free Foods, Products, Shopping & Medications
Which blood tests did your endo take? What thyroid supplement are you taking? If you have constipation, you still have hypothyroid symptoms. You may need a different thyroid supplement. I had to add T3 to my T4 supplement, before my constipation was resolved. Most people don't do well on T4 only therapy. -
ARCHIVED I Need Suggestions For Dietary Fiber Supplement
burdee replied to cahill's topic in Gluten-Free Foods, Products, Shopping & Medications
I had chronic constipation for most of my life (except when I had C-Diff), even after I abstained from gluten, dairy, soy, and egg. I added rice bran to my cooked cereal (oatmeal, Bob's Red Mill Mighty Tasty). I used only gluten-free breads which were 3 or more grams of fiber per serving. I ate tons of fruits and vegies daily (esp. ones which were high... -
ARCHIVED Can Cows Milk Contain Wheat, Rye, Or Barley?
burdee replied to listinglily's topic in Related Issues & Disorders
Cow's milk does not contain gluten. However, it does contain casein, a protein to which many people react with antibodies (allergies). You could have a casein allergy or a lactose intolerance. Intolerances do not involve the immune system, but rather an absence of digestive enzymes, such as lactase, in lactose intolerance. If you're uncertain whether... -
ARCHIVED Which Is Easier For You: Dairy Or Gluten Free?
burdee replied to JWSJ's topic in Coping with Celiac Disease
Dairy was harder for me ... at first. I missed the creamy taste milk (rice milk was horrible) and other dairy products. I missed ice cream, cheese and lattes. I couldn't tolerate soy substitutes and was later diagnosed with delayed reaction soy allergy. Then I discovered creamy Hazelnut milk and coconut milk (for cooking), coconut milk based ice creams, and... -

Sunshine burgers (barbeque flavor), okinawa yams (purple) and brussel sprouts. The last 2 dishes were topped with Earth Balance dairy/soy free buttery spread. Actually the whole thing was a 'leftovers' frozen dinner from a few weeks ago. I'm running out of those leftovers frozen dinners. So I'll need to cook again soon. -

ARCHIVED How Long Will It Take For Me To Get My Energy Levels Back?
burdee replied to vb10's topic in Coping with Celiac Disease
Have you had your thyroid hormones (TSH, free T3, free T4, TPOab and RT3) checked? Hypothyroid can cause fatigue. Also how are your iron and B12 levels? Low amounts of either can cause anemia and fatigue. Also acid blocking drugs will prevent your stomach from absorbing the iron from the food you eat. We need acid to properly digest and absorb nutrients... -
ARCHIVED Entrolabs Question
burdee replied to joyjoy's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
My doctor concluded I had celiac after seeing 3 positive results from my Enterolab panel: gliadin antibodies, tissue transglutaminase and dna test, as well as years of my physical symptoms, which she had misdiagnosed as 'IBS'. Any of those tests alone may not be useful, but all 3 together convinced both my doctor and 2 naturopaths. However, many docs are... -
