Yesterday I went to visit Hamilton College and Colgate University in New York. I went to Colgate first and I was talking to the chef who was making my (delicious!) omelette and asked how they accomadate special diets. He said he had other students on the diet, and pulled out Gillian's gluten-free pizza dough!! I knew I would be fine there. Then that afternoon...

ARCHIVED Whole Foods Baking Mix 365 Great Product!
HAK1031 replied to zachsmom's topic in Gluten-Free Recipes & Cooking Tips
Just a little aside...with many baking mixes, like pamela's, you have to add a but more mix than flour if you are substituting on a non gluten-free recipe to stop the running. I learned this the hard way too! But if this whole foods one works, I want some!! I've heard great things about that brand! I've had their prepared cookies and they tasted normal!!... -

ARCHIVED Chreese
HAK1031 replied to confusedks's topic in Gluten-Free Foods, Products, Shopping & Medications
No, sadly it's not dairy free...and I'm now casein free as well. Wait, what's this chreese stuff? They make soy AND dairy free cheese? *goes to wikipedia in excitement* -
Thanks, these are awesome ideas!! I never thought of cornering these "niche markets" but I can only imagine the nightmare that parents of kids with allergies must go through to find sitters. I am epi-pen trained as well (I carry one for a sqaush allergy...I know, who's allergic to squash? lol and latex) so the allergist is a great idea. THANK YOU!! This is...

ARCHIVED Vegetarians Celiacs
HAK1031 replied to seattlecdfriend's topic in Coping with Celiac Disease
The forum vegiac.com has some good info for vegetarian or even vegan (yes, they exist!) celiacs -
But the credit card was maxed out from $500 trips to whole foods to buy gluten-free food!

Thanks, these are great ideas. Although we don't have a support group around here, I would bet that there is an autism support group. And my brother and cousin have asperger's, so I have experience in that regard. Plus I'm a lifeguard which parents like

hahaha that's hysterical; I'm allergic to latex too, my friends love to make fun of me for it lol

I know I enjoy baking and cooking more now. I am forced to be creative, and the challenge is fun for me. I love cooking, and if I see a dish at restaurant that I like, but can't have, I'll go home and try to replicate it. I enjoy that.

ARCHIVED Does Anyone Else Have These Symptoms
HAK1031 replied to newceliac's topic in Coping with Celiac Disease
I get that rib pain, exactly as you described! I think it's where the beginning of the intestine is. -
Hey everyone, I'm 16 and need money. However I don't have time to get a job until school gets out. My parents suggested babysitting, but I worry a lot about CC. The last time I babysat (for my own nephew, so they were aware of my celiac) I got really sick. He was eating a sandwich and putting his hands everywhere, and even though I washed my hands and...

ARCHIVED Back From Disney! Kudos!
HAK1031 replied to jayhawkmom's topic in Traveling with Celiac Disease
Oh I'm jealous!! I love disney. I haven't been since going gluten-free, but I went with my cousins who have multiple anaphylactic allergies including nuts (peanuts and tree nuts), eggs, milk, and soy. The chefs are sooo well-versed in everything! They even made a special dessert for my egg-allergic cousin- it was like smores but with dairy-free dark chocolate... -
ARCHIVED Diary Problems Or Glutened?
HAK1031 replied to ksymonds84's topic in Gluten-Free Foods, Products, Shopping & Medications
The pills are most likely your problem, especially if they are chewable. The Lactaid brand caplets (not chewable) are gluten-free, but the tablets (chewable) aren't. The not ok ingredient on there is "starch"...which with drugs, can be corn OR wheat without them labeling it. -
ARCHIVED Yaz Birth Control
HAK1031 replied to Cynbd's topic in Gluten-Free Foods, Products, Shopping & Medications
I've seen them on gluten-free lists...I was on it for a while. I've been on several different pills (for endometriosis) and all of them were gluten-free..no worries -
ARCHIVED Help For My Teenager
HAK1031 replied to kyss's topic in Parents, Friends and Loved Ones of Celiacs
As for the friends, have them over for a gluten-free (and ok for other allergens) dinner and, of course, dessert. This will help to take away some of the strangeness of the diet if they realize that, with a few modifications, your daughter can eat real food. I'm 16, and another girl in my group of friends has celiac, and they have a pretty good grasp on what... -
ARCHIVED Golly, Are We "trendsetters"?
HAK1031 replied to Rosebud710's topic in Publications & Publicity

ARCHIVED Just A Wheat Allergy?
HAK1031 replied to splash's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I think different types of gluten can affect people differently. Surprisingly wheat is not so bad for me. If I have that accidentally, I might be in the bathroom for a little while but I'll be better in less than 24 hours. If I have barley, however, I'll be out of sorts for a week. The sickest I ever remember being involved a lunch of soup with barley and... -
ARCHIVED Need To Find Gluten, And Milk Free Protien Drink
HAK1031 replied to kellybhill's topic in Parents, Friends and Loved Ones of Celiacs
While I can't help you on a specific drink, I can give you Gluten-free Casein-free vegetarian protein sources. I would also recommend not going too heavy on the soy because that can cause intolerances as well. Some ideas: -black beans, I pack these in lunches and bring corn chips to dip. They are good with different spices. -hummus/chick peas -nuts/nut... -
ARCHIVED Ok, Need Some Advice
HAK1031 replied to GlutenFreeAl's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
First of all, the blood test has a crazy high number of false negatives, with me, my brother, and several of my friends on that list. Secondly, many believe there is a link between endo and celiac. I have both, as do quite a few others on here...there was a thread a while ago. My endo symptoms are definitely better off gluten, and my celiac symptoms ... -
ARCHIVED Could This Be Celiac?
HAK1031 replied to Nic's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
There are definitely members on this board with those symptoms. There are also members w/o genes that the US recognizes as celiac genes, but they do have celiac. Genetic research is very preliminary. It is still definitely possible for your son to have celiac. Hvaing him retested may not be the answer- they tests were likely right. Also prometheus is a much... -
I'm already about 75% dairy free from my lactose problems, but now I'm going completely CF for a week or two to see if I feel better. I am starting to feel sick again- headaches, and I still have that stomach bug (but I can keep fluids down OK now and I'm not dehydrated, but I will be seeing the doc tomorrow). I'm starting to feel a bit like I did pre...
