We did some smoked pepper and onion sausage with potatoes and cabbage. Nothing fancy either, but it's always yummy! It was blazing hot here, too, so I'm kind of surprised that we wanted to cook and actually eat. We washed it down with a nice cold beer, though. I'm sure that helped. -

I work with a local CSA that offers fresh, local organic produce, and sustainable meat. I LOVE it! And the produce is soo much better than anything you can get in the store. Yup. Everything I make is gluten-free. I'll have to post it. It's one of Carol Fenster's recipes. Super easy (my husband made it tonight). I don't know how "authentic" it is, but the bhajis are from my Indian cookbooks. I'll have to run it by my Indian friend and see what she thinks! She may just burst my bubble... -

I took SweetTartelette's (blogger) recipe for gluten-free puff pastry and then combined and modified it to work with a traditional croissant recipe. I cut way back on the butter because I have found that a lot of gluten-free recipes need less butter than their gluteny counterparts. But I did find that I needed to up the butter and cut back on the gum. But... -

WOW! Your pics look great! Love2travel: I made croissants a couple of weeks ago. They were surprisingly good. Not as light and fluffy as they should have been, but pretty good for a first shot. I went back and modified a bit, so as soon as I get some time, I'm going to try them again. -

I figured out soy about a year after I was gluten-free. I thought that dairy bothered me, so I would use earth balance instead of butter, stuff like that. But I didn't eat a ton of soy. I'm going through something similar right now. I just had EGD done. I'm waiting for the biopsy results, but my doc showed me the pics and I had visible irritation in my stomach. I've just recently started working with guar and it is definitely different. I didn't notice a difference in taste, mainly texture. The elevated IgG means that there is a reaction going on. Doctors still mainly rely on the IgA though, as it's more specific. But the IgG is a dianostic tool, especially if you are low in IgA. The two IgA tests are low, but your total IgA levels weren't tested, so you could be deficient in IgA which would affect the accuracy of the test results. Not sure... -

It does make things difficult. I was in a two week class with someone who also had celiac and was supposed to be gluten-free. But she ate the sausage biscuits someone brought one morning, the pasta that someone brought for lunch one afternoon, etc, because she just couldn't resist. I'm using both gums, separately, though. One is for someone who is corn allergic, down to the xanthan gum level. It's not that it has to be vegan, per se, but it's easier to ask it that way since it is for someone who needs it to be egg free and dairy free. I'll have to check out psyllium husk, too. Yeah, BRM + WF= expensive I use TJ's ALL the time. $3.99/lb. Can't beat it, AND it still has the skins which I feel just adds even more nutritionally. -

Post your recipe and we can probably help. It's tough to get the right amount of butter, but I use 6 T of butter in my recipe, which I think has 2 C of flour. I'll have to double check it later. Also a little brown sugar helps add a bit of chew. I have screwed up LOTS of choco chip cookies. LOTS! -
