  1. Okay, you can do this. This cravings routine for junk, aka sugar and carbohydrates, is the result of a physical reaction to being malnourished from the damage to your intestines. You understand it from an emotional viewpoint, and once you understand it from a physical viewpoint, then you have the power to fix it. What you need to do is to tell yourself...
  2. So how is your gluten free diet going, anyway ? You said a few months ago you were having a lot of sugar and junk food cravings. This can be a classic sign of your diet being out of whack. Cravings can be caused by mineral imbalances, and eating too much sugar or high glycemic index easily digested grain carbohydrate mixed with sugar (think lots of ...
  3. There is too much depersonalization fostered by the internet and reality television, so people are thinking that games and gambling, combined with voyeurism, have the better outcome than real life doing the right thing.
  4. Call GI doc back and tell him you're getting too sick on gluten to continue. Then get genetic testing somewhere else. Sheesh. Genes & symptoms & positive blood test & positive diet response = you are at least gluten intolerant. Watch the kidlet for symptoms, and maybe get him genetic tested also, after you. He won't automatically get...
  5. "Gluten" is the word for protein in grain, but as to "gluten free," here in the USA, and other places as to a gluten free diet, we mean the protein from wheat, rye, barley, spelt. Corn, rice, and millet has proteins which are technically called gluten, but they are not "GLUTEN" like the glutens in the wheat family. They are different. They don't cause...
  6. I think the use of the "low gluten" category they are contemplating, for food over 20 ppm to 100ppm, has the potential to be highly problematic. In Europe, specifically the UK, they use this "Codex wheat starch" in a lot of processed foods and their government claims that this is "suitable for all people following a gluten free diet" - but here on this site...
  7. I had this sort of thing happen, it drives me nutty sometimes. The only thing to do is to either go thru them one by one, or throw them all out. I'm not using much tapioca anymore, and I've been doing a lot of stuff sans the xanthan gums. I have a bag of millet in the fridge, that after I bought it I run across several references to that particular...
  8. Yes, if you have cats that go between indoors and outdoors, and if they eat a mouse with a flea, then you can have fleas infesting your house- and a cat getting worms from the fleas- and they are notorious host vectors for tapeworms. Then the dog can get fleas, then worms.... takes a bit of chemical warfare to break the cycle.
  9. What is the book, and who is the author? I've seen some stuff by chiropractors who are making claims like that, but they were ridiculous - the actual proteins in corn, rice, and millet are very different than those of wheat. (so far.... as long as we don't get some sort of GMO frankenrice in the future....) But there was a recent study done where grains...
  10. There are some people who are either not sticking to the diet, or have not recovered physically yet and are prone to saying crazy things. And then there are people who are just trolling trying to provoke anxiety or attention. Sounds like you found one of them. Trying to figure this out, it just sounds like confusion. There is an enzyme involved in...
  11. Brigadoon! Groundhog day! We get to do it again! Well, so glad to see that Senators Leahy and Wyden, plus the others who put on that "awareness" thing in DC, may have had some effect on this FDA logjam ! Ken, can you have a look at this, and tell us if you think this is a typo or not? It's from Boston.com Open Original Shared Link
  12. No, not true. There may be a few here that harbor that suspicion, but whatever. There are some in the media trying to push the food intolerance = woosies routine, or implying gluten intolerance, a real auto immune disease, is a passing fad or being adopted by the neurotic. I try to research what their "angle" is and where they are coming from, before...
  13. You can make nut meals in the blender, and use that for a grain substitute for part of the mixture. I get quizzical looks sometimes from store cashiers when I buy several multiple pound bags of almonds at once, until I say it's for replacing wheat when I bake, then they go "oh, cool !" There is also coconut flour. Buckwheat has surprised me. I grind...
  14. Have you thought about making your own gluten free chicken feed ? Chickens do NOT need wheat and can do perfectly well on basic mixed grain/seed concoctions to which you can add soybean meal if you want to boost the protein, and salt/mineral mixes. I mix wild bird seed with black oil sunflower seed, but in the past I've also used a molasses/corn/oat mixture...
  15. You will see a lot of us using the smaller pan sizes such as a mini loaf or the larger 8" x 4" because these gluten free flours, especially the more exotic higher protein ones, work differently than regular wheat flour, and the smaller pans solve the "gummy middle doughball burnt top" problem. The trade off is you get to eat two sandwiches or 4 pieces...
  16. You will need to be absolutely sure that everything that goes into your mouth, including prescriptions, over the counter meds, and supplements, are gluten free as well. Only a month is not that long yet to be gluten free- why don't you try giving up the dairy for a while, then re introducing it in the form of cheese without lactose, after a few months...
  17. Recipe update: I have discovered you can soak the chia seeds in room temperature water for a slightly longer time, and they actually gel up quicker and better than heating in hot water. You may want to try using more chia seed if a teaspoon isn't enough. Flax meal still needs hot water soaking.
  18. Gluten ataxia- Yes, it improved with diet, but it took a while longer for me, as I also have c- spine issues and have not had a doctor who could sort it out - I learned about this by reading, reading, reading trying to match symptoms to what could improve with diet- in the beginning when I gave up grain, I got better and was told this was not related...
  19. What a rip. They didn't perform the full blood panel.
  20. Have you seen the wiki link on the HLA - DQ8 gene carriers ? They are adding more and more details to it all the time about which ethnic groups on which continents are carriers. Open Original Shared Link
  21. Q. How do you cope? A. chocolate and coconut. You will find that if you want to, you can make "bread" like foods out of almost anything, including grainless recipes. And you can grind nuts in a blender and buckwheat kernels (kasha) in a coffee grinder. You can even use a hand mortar and pestle... Potatoes can be cooked and then mashed, as can beans...
  22. Pack as much as your own food as possible. Go to locations with the best chance of finding gluten free meals if you think you are going to want to eat out. We do "staycations" where we daytrip mostly, and in this state on the west coast, we will never run out of places to go and do things. I just am not into flying anywhere long distance, with the barbarians...
  23. I agree with Sylvia. It sounds like his body is trying to tell him something. My spouse eats gluten free at home but can switch over to eating junk, er, gluten when we go out, sometimes, (other times he orders off the gluten free menu with me) and does not seem to have a problem with it. A lot of people think heartburn and indigestion are "normal,...
  24. Some recipes are more mold retardant than others.... I use a lot of almond meal and amaranth in recipes, along with olive oil, and a bit of cider vinegar, and can store mine in the refrigerator, tightly wrapped or bagged in plastic. Also have done a little vegan eggless chia seed loaf out of buckwheat, garbanzo, potato, almond, amaranth, teff, and can refrigerate...
  25. That was nice of them. Always good to see a lipstick without it. I have super sensitive eyes and can only use a mineral type liner that you wet with water and put on with a brush. Pricey little tiny jars of powders! Found out that the trick is to use a good quality brush. But trying to coordinate this stuff if you're over 50, and can't see anyway is...
