  5. Corn might be traditional, but I find in a lot of these countries they don't cook local food for the tourists or people from other countries. They cater to the tourists' tastes - bread, pasta, pizza, etc.

  12. I had no symptoms before being diagnosed, and for a while afterwards. I think the symptoms started about a year and a half after I was diagnosed. So now if I ingest gluten, I know within a few hours. I waited about 2 years before trying oats, and I eat them almost everyday and have no reaction.
  13. cornmeal? it works for oil. which i know because i once dropped a glass bottle full of olive oil on my kitchen floor and it broke. there was oil everywhere! i poured cornmeal on it and then just scooped up the cornmeal. don't use flour.

  15. According to one of the gluten-free cookbooks I have, it says that guar gum can be used instead of xanthan gum (but I don't think the other way round). It says however that if a recipe calls for 1 tsp xanthan, then use 1 1/2 tsp guar gum. I've also seen recipes using ground flax or ground chia, instead of xanthan, but I'm not sure about the amounts.   18. Food for Life brown rice tortillas were recalled in Canada in October 2010 due to gluten contamination. I believe there was also a problem with undeclared wheat in spelt bread in 2008.   23. The biopsy is covered by OHIP, the blood test is not. Unless you have it done at a hospital lab. My GI works out of Toronto General, and I had the blood test done at the hospital lab, so I didn't have to pay for the blood test. I won't recommend my GI though - great at diagnosing, but horrible at explaining things.

My sister never got tested. By that time, she had already been diagnosed with Crohn's Disease, and decided that all symptoms she had were Crohn's related.   25. I find that it always takes me longer to recover from illnesses. Last March my husband and I both got the stomach flu. He had diarrhea for one day, and was just tired for another day.
