  1. I made delicious buttermilk biscuits this afternoon because it was -30 degrees celsius outside so there was nothing to do but stay inside and bake! And it a moment of extreme weakness I not only offered my non-celiac boyfriend a biscuit, but I gave him the biggest one!!!   2. She needs to get her iron levels tested. I went through a 6 month period of almost fainting at least once a week (luckily I never did faint because I was able to sit or lie down in time). When I finally went to the doctor I found out that I my iron was dangerously low. The funny thing was that before I was diagnosed I was vegetarian and never had problems...
  3. If this person is a true friend then they will understand that you can only eat at certain restaurants. If they insist on eating at a restaurant where nothing is safe for you, then go along but don't eat. Or just have a bowl of plain steamed rice.

  5. A bowl of cereal with a handful of trailmix thrown in. Usually Nature's Path Mesa Sunrise flakes, or Enjoy Life Crunchy Flax, or a mixture of both. Okay, so cereal isn't really a meal but its my comfort food!

  13. I have NEVER gotten D, not once. Its ALWAYS constipation. And one tiny crumb of gluten results in 4-6 weeks of constipation. Try magnesium pills. Magnesium draws water into the intestines which will help reduce constipation.

  15. Try replacing one cup of the cornmeal with a cup of any kind of gluten-free flour (I like to use corn flour to keep the corn taste). So, one cup cornmeal, and cup flour.

    You really have to make the time. But instead of thinking about it everyday, put aside time once a month. Once a month I take an afternoon and make big batches of several things that I pack in single serve containers for the freezer.   17. Any kind of major stress can be the trigger. For me, the major trigger that led to diagnosis was getting c.difficile and then not getting better after the c.diff was clear. But looking back, I think the real start of symptoms was the first marathon I ran. So any kind of stress - illness, physical stress (marathon!), emotional stress, etc.
  18. My non-Celiac-but-eats-gluten-free-at-home boyfriend is an amazing baker (as a hobby). After I was diagnosed he switched to baking entirely gluten free. No wheat flour in our house (his choice, not mine). If we told friends that what he'd made was gluten free, they'd comment "hmmm, yeah tastes gluten free". But then we could make the exact same thing again...
  19. Brown rice flour (not white rice) is a good substitute for sorghum. Avoiding the tapioca is the tricky part. Many mixes have tapioca and corn or potato starch.   21. If your mother loves you and cares about you, I'd say it is her job to understand the condition. But thats just me. I'd pass on the chicken if I were you. Often the chickens are injected which means the gluten is in the whole chicken, not just on the skin.
  22. I second the need for locations to be identified. There's a such a wide variation in products between countries and the exact same product can be gluten-free in one country and not in another.   23. Is the c. diff diagnosis based on symptoms alone, or on stool tests? I was diagnosed with celiac after having c. diff. I was sick with c.diff for 3 months and on flagyl.   25. Get rid of your toaster too - it will be contaminated with crumbs. Also things like jam, peanut butter, butter.....anything and everything that you may have double-dipped in - i.e. touched gluten and then stuck the spoon/knife back into it.
