  1. I just enjoyed a delicious fish pie. Now I'm waiting for a mysterious dessert....I hope its chocolate. The best part is that I didn't have to make any of it. Good thing my boyfriend is a suberb cook. And baker. And its all gluten-free. Its our Valentines dinner.
  2. Another option is to buy toaster bags. Then you can still use the same toaster but the bag will keep your bread safe from contamination. I've never seen them in a store but you should be able to buy them online.
  3. Whenever I've been glutened, the most prominant sign is hot flashes and profuse sweating at night. I'm in my early 30s so its definitely not menopausal hot flashes! I also recently had to stop taking birth control because I realized it was causing constipation.

I have a co-worker who seems to think that "Celiac" is an umbrella term for all food allergies, sensitivies, intolerances, etc. He's lactose intolerant, but then talks about how his family doesn't understand about celiac...but I know he's not celiac because he eats gluten all the time!   10. Do you use olive oil, or another type of oil? I tried them once with olive oil and found the olive oil taste a bit too overwhelming. Its all I could taste.

    Take Acidophilus pills. Strangely enough, it was a sinus infection that led me to Celiac Disease.   14. Yup, thyroid checked and all was normal. I should note that in addition to adequate fibre and water, I'm also quite active (I run marathons) - all the things that doctors tell you to do to resolve constipation issues, I'm already doing!

  16. Once something is recalled, its banned from my life for good! Food for Life tortillas being one example. I used to eat their tortillas and never had any problems, but I'm one of those Celiacs that doesn't always have a noticable reaction.   17. I can't eat a whole raw apple with the skin. Peeled, its okay. Cooked, its okay. But raw with the skin - horrible stomach pains and gas. Apples are high in fructose apparently which makes them hard to digest. Try peeling or cooking them.

    Pure uncontaminated oats are safe. Although some people can't even tolerate the pure ones. Oats themselves don't contain the gluten protein, but the reason oats have always been on the unsafe list is that most commercial produced oats (like Quakers) are contaminated with gluten grains during processing. I"m all for improved labelling, and have even written to the Canadian government to complain about their lack of action in this area, but I'm inclined to agree with the beer producers: of course beer contains gluten! Unless labelled gluten free. If only Health Canada could get their act in gear and focus on labelling requirements for all of the products...
