    Be sure your diet is 100% gluten-free, and eating in restaurants, even food from a gluten-free menu, is a common source of contamination. In general if your ataxia and other symptoms are caused by gluten, they should improve over the next few months, if your diet is strict enough.

    I think this should be fine given your awareness of the possible issues. Proper hand washing should eliminate the risks. I'm not sure about the bed issue, but perhaps make sure your cat doesn't eat in your bed.

    The only caveat would be the ~9% of celiacs who can't tolerate avenin protein, which seems to be a related intolerance for a sub-group of celiacs.

    I agree, only the maker can make a gluten-free claim, and if it's on the package it should be gluten-free.

    For clarification, "may contain wheat" does not mean that it does contain wheat. Many companies use CYA statements like this, and if you investigate further you may find out that a product likely doesn't contain wheat. But it is always best to simply find products that are labelled gluten-free, or at the very least don't say "may contain wheat."

    I also could not tolerate cow's milk when I was diagnosed, but after a couple of years could.

    There are some studies done that have shown that Casein/cow's milk protein can also elevate tTG in some idividuals.

    I doubt there is a good way to tell exactly how much, and it would likely vary a lot from person to person. Do you eat in restaurants? This is a common source of cross-contamination.
