The What's For Dinner Tonight Chat
Ahorsesoul replied to jess-gf's topic in Gluten-Free Recipes & Cooking Tips
Taco Rice--I'm a taco lover and this is better than tacos any day. There are lots of recipes on the internet. I just make it the same way I do for tacos. I do add whole beans to the meat. -
Good point. I had forgotten about this point of view.

ARCHIVED Grandmas, Granpas, & Aunties How Do You Deal With Relatives?
Ahorsesoul replied to teresasupermom's topic in Parents, Friends and Loved Ones of Celiacs
Make her favorite sandwich and a to-die-for-dessert that will have everyone wishing they'd come to your house. Stress to your daughter that it is the socialization that is important and not the food. She sounds like she has a good head on her shoulders to say she would rather have a sandwich instead of eating there. You should be proud of yourself for... -
You certainly were not out of line. You just were hurt that no one considered your problem. You are giving up a lot by going gluten free. You just have to realise that because you are celiac the rest of the world does not change. How can an office work around everyone's problems with food. You hare having gluten withdrawal. Think about it: They can't serve...

The What's For Dinner Tonight Chat
Ahorsesoul replied to jess-gf's topic in Gluten-Free Recipes & Cooking Tips
Tonight is an easy gluten-free dinner. Steak and lettuceless salad. No thinking needed. Just eating. Last night for dinner I made fluffy pancakes. Our local health food store had a Gluten Fest this last weekend. I love to be able to sample gluten-free foods before buying. One company was making pancakes. Those fluffy light ones that I have not been able... -
ARCHIVED Can You Make A Roux?
Ahorsesoul replied to mbrookes's topic in Gluten-Free Recipes & Cooking Tips
Could you add some Kitchen Bouquet to make it darker? Not sure if it would change the taste of the recipe but it sure would be darker. You could try some instant coffee to some recipes. -

Try this stove. Has two ovens. There probably are other brands but I'm familiar with this one: GE JB870SRSS Self Clean Dual Oven Ceramic Range -
ARCHIVED Crustless Pumpkin Pie
Ahorsesoul replied to Rowena's topic in Gluten-Free Recipes & Cooking Tips
Crock Pot Pumpkin Pie Pudding: I use this recipe but use Pamela's Baking Mix for the Bisquick. It is excellent. Open Original Shared Link Pumpkin Crunch Cake: I've make this recipe using a box of Betty Crocker's gluten free yellow cake mix and cut the butter down to half or two thirds. Oh, I use sliced almonds but only because the first time I made... -
ARCHIVED Ham?
Ahorsesoul replied to SilverSlipper's topic in Parents, Friends and Loved Ones of Celiacs
I always call the company that makes the ham (or any processed meat) or email them before I buy. I have stood in the store on my cell phone asking them if it's gluten free. If they can't tell me, I go to another brand name. Consider that your dd may not be able to eat pork products. I have problems with them and I am sensitive to gluten just like your dd... -
ARCHIVED My Family Just Doesn't Get It
Ahorsesoul replied to jasonD2's topic in Coping with Celiac Disease
You have come a long way so do not let your family's lack of understanding bring you down. You know what you can and can't do. When they ask why you aren't eating say you just couldn't eat another bite or you are saving room for (fill in the blank) later (preferably the yummy dessert your brought). You have proved to yourself that eating gluten free keeps... -
ARCHIVED Keeping My Casseroles Outside
Ahorsesoul replied to Loey's topic in Gluten-Free Recipes & Cooking Tips
I think it's too warm too. Even a box with ice in it and wrapped in a big blanket would work. Can you not use crock-pots for these two items? -
ARCHIVED Sensitive To Pig Products?
Ahorsesoul replied to SoyBoy's topic in Coping with Celiac Disease
Excellent point you bring up Roda. An animal that has touched a allergen could contaminate a person if not properly handled during processing. -
ARCHIVED What Do You Pack In Their Lunch?

ARCHIVED Sensitive To Pig Products?
Ahorsesoul replied to SoyBoy's topic in Coping with Celiac Disease
Yes, I have problems with pork too. Here's why I think what an animal ate can cause problems. Guys were out hunting pheasants. I cooked the pheasants very carefully avoiding anything with soy because one of our friends is allergic to soy. He eats and has to use his epi-pen. We reviewed the cooking ingredients. Nothing. Turns out they shot the bird when... -

ARCHIVED Gluten-Free Pie Crusts
Ahorsesoul replied to MindytheOrganist's topic in Gluten-Free Recipes & Cooking Tips
I love the GFP pie crust. A lot of time I only need one crust so I either make them all and freeze the extra crusts in a pie pans or I measure out the contents and mix up a fourth of it. Then I store the unused mix in the freezer. I've had non gluten free people ask me for my pie crust recipe. -
ARCHIVED Hershey's Kisses
Ahorsesoul posted a topic in Gluten-Free Foods, Products, Shopping & Medications
I picked up Hershey's Kisses, Cherry Cordial and Candy Cane at the store. I popped one of each into my mouth. Worst reaction in years. Just not sure which or both of them. These go out of the house today. Anyone else reacted to these Kisses? -
ARCHIVED Anxious About Thanksgiving
Ahorsesoul replied to bridgetm's topic in Coping with Celiac Disease
Excellent example of what to say and how to move the conversation along. I suggest you bring a dish to share. Fill your plate with it and enjoy the family. If you cook your own turkey dinner the day before you will not miss not having a slice of contaminated turkey. -

ARCHIVED A Gluteny Food You've Craved But Definitely Not Worth It...
Ahorsesoul replied to heatherjane's topic in Coping with Celiac Disease
I've been gluten free long enough to know I can find or make most anything I miss from my pre-gluten free days. Donuts, french bread, pizza, croissants, pasta. Just tonight I made Tiramisu. But phyllo dough, I'm with you Ravenwoodglass. Can't find a replacement---yet. A tortilla that actually rolls, yea RideAllWays, that too. French Meadow Bakery has... -
