Maida flour, used in the pastry on samosas is very highly refined, low gluten and often contains part tapoica starch. So its really not the thing to choose for an allergy challenge.... -

I did the unnatural totally processed route- I drank gallons of Ensure Plus when I was first going gluten free. Its got no gluten and no lactose. And I did not have to think about what to eat, which is hard enough for me on a good day....Ensure and bananas... Has your doctor sent you to an endo or a metabolic disease expert yet? -

And don't forget, if you're having fat malabsorption secondary to celiac, if you go out and eat heavy, greasy food such as steak or fried foods, you can get classic malabsorption symptoms without being glutened-good ol' bloat, cramps and D. Of course there is the well known connection between celiac and Sjogren's, which causes severe dry eye. There is a simple test (the Schirmer test) for the dry eye where they put little strips of blotter paper in your eye and see how long it takes them to get damp, lots of fun (NOT!) I have Sjogren's syndrome and gluten exposure will send me into a "flare". Don't forget to tell your doc your full range of symptoms, maybe they will want to do a sed rate and C-reactive protein etc while you are glutenated. Those are tests measure inflamation. If you're going to gluten up you might as well get your money's worth out of the awful experience...

I know they had wheat derived glucose syrup the last time I saw this argument (which was two years ago, I missed an Easter due to being in the hospital). The Cadbury UK site has some good information on this, as does the Irish Celiac site. -
One of the primary causes of death during the famine (besides starvation) was Typhus. If celiac makes us immune to typhus that would be really cool! Sort of like sickle cell and malaria? I can't find anything on that online, if you find out anything do post.

Did I get here in time for the "does glucose syrup derived from wheat contain gluten?" argument. That one is nearly as much fun as the vinegar and food starch arguments. I hate those nasty eggs so it does not bother me. Its all going to boil down to who you believe, who you trust and how you react-considering whats gone on lately with stuff like cat food...

After being gluten free for a while I was able to switch to the cheaper over the counter stuff (pine tar) for occasional flare ups. I still use the pine tar soap because I like it

Agree totally....The Amy's is not bad if you doctor it up some. If you live near whole foods you can try their pizza shells, I like them better if you put plenty of olive oil on them so they will crisp up a little, you can also put a lot of parmasian cheese on the bottom before you heat it and let that add a crispiness if they are too soft for you.
