  1. I have to give a shout out to Mary's Pizza Shack....we bought gluten free pizza there Saturday night (on our way back down to Southern CA from Oregon). It was great!   2. I've used sweet rice flour in bread recipes, but never by itself. It does make the bread have a certain very subtle "stickiness" which seems to help it hold moisture a bit better. The flours and starches I used were in the following proportions: 3/4 C sorghum flour 1/2 C millet flour 1/4 C sweet rice flour 3/4 C tapioca starch 3/4 C potato starch...
  3. I just tried certified gluten-free oats for the first time since I went gluten free (Nov 2008). The following day I had severe D all day....clearly I can't eat oats, at least not yet. I may try again after I've been gluten free for a year or so. JoAnn
  4. I too tend to have unusually high HDL levels....this is interesting. P.S. My cholesterol levels were always the best on the Atkins-type low carb diet....which is pretty close to the paleo diet if you avoid dairy and eat organic/free-range. I definitely ate lots of eggs!
  5. My guess is that it would work with any number of different veggies....peas and carrots were just the "traditional" veggie mix I guess. I've been thinking about adding mushrooms to it because I love mushrooms! The spices and seasonings used are interesting; she uses nutmeg (in the potatoes) and cloves and bay leaf in the white sauce....green beans...
  6. OK....FYI, we also sub rice milk for regular, etc., because of our own allergies. It does work even with lots of substitutions.
  7. We're becoming addicted to a Dutch version of Shepherd's Pie that uses fish: Open Original Shared Link It's easy to make it gluten free by subbing sweet rice flour for the regular stuff. Anyway, this recipe is FABULOUS! It's serious comfort food, and it will help you use up your potatoes!
  8. I've substituted tapioca starch for potato starch before....one-for-one. I've seen posts here before that said that all of the starches sub for each other pretty well. Here is a good bread recipe from Ginger Lemon Girl; she does use a very small amount of potato starch but I think you could sub tapioca or corn starch: Open Original Shared Link Anyway...
  9. It can take anywhere from 12 hours to 3 days for me to start having the really bad reactions when I've been glutened. Delayed reactions are pretty common, actually. As to why you've started feeling bad 6 weeks ago....that's one of those puzzles you've got to get to the bottom of. I've had similar things happen, and each time it took me a while to figure...
  10. P.S. Everyone is descended from the same group of hunter-gatherers, and that likely means everyone will do best on the "paleo diet". Which means meat, veggies, and fruit. Period. No grains.

  12. I definitely react if my food is prepared in the same pots and pans (or on the grill) as gluten foods. Very small amounts of gluten can cause the same reaction as large amounts. So yes, you should be concerned about what was cooked in pots/pans before your food was cooked. Hope this helps!

  14. False negatives in bloodwork and intestinal biopsies are quite common, unfortunately. I read somewhere that false negatives are more common in those with DH. Will you still be seeing the dermatologist on 27 Aug? The skin biopsy should tell you something. But it all else fails, you could always go gluten free anyway. Let your body tell you if...

  17. Thanks mushroom....I'm sorry to hear that you had this sort of problem! It sounds somewhat similar in that I do end up gagging and retching sometimes when trying to swallow but I'm not sure that it's gas that's in the way. It actually feels like my throat has suddenly become too small (spasm?). If it happens when the food or pills are part way down...
  18. Thanks momxyz! I searched on celiac acid reflux and came up with this: Open Original Shared Link So apparently celiac disease can cause acid reflux. But now that I'm gluten free I think that what's causing my reflux is the prednisone I'm on. I do remember my GI saying something about acid reflux possibly triggering the chest spasms.

    I'm sorry that you're going through this My husband's DH looks like that. The dermatologist is supposed to biopsy the skin in a few places....not on the actual eruptions, but next to them, on clear skin. They will inject you with a local anesthetic before the biopsy. The drug that treats DH is a pill called Dapsone. It has lots of bad side effects...

  21. I have had increasing problems with esophageal spasms in the past several years. Sometimes it's really difficult to swallow food or pills....my throat just seems to try to close up on me. Other times the spasms are lower down, in the chest area. I had one in my chest last year that was so intense they hospitalized me for 3 days and ran TONS of tests...
  22. I always get a flu shot...ever since my last bad bout of illness during graduate school (missed two months of school because of pneumonia). Because of my asthma and tendency to get brochitis/pneumonia, I also get the pneumonia shot every 5 years or so.
  23. Hi Kim, I just used the Betty Crocker yellow cake mix for my son's birthday and it was REALLY good!! I seriously don't think anyone could tell it was gluten free! I couldn't find it in the store either, so I ordered it online (send me a PM and I can tell you where I got it). For a two-layer cake I had to use two boxes because each box only makes one...
  24. I don't know if you're close to one, but we do a lot of shopping at Trader Joe's. They are very good about marking things with a "g" when it's gluten free. We buy most of our chips (corn and potato) there, and have never had any trouble (and we are sensitive!). We also buy Mission Tortilla Chips at Costco; they are gluten free. JoAnn
