ARCHIVED Test For Gluten Intake
dilettantesteph replied to Hells Bells's topic in Super Sensitive People
You beat me to it. There are other studies too. -
That could be the reason for a reaction to carmel color.

ARCHIVED Doctor Visit Today - Totally Mortified (:
dilettantesteph replied to JaneWhoLovesRain's topic in Dermatitis Herpetiformis
That sounds like when I was a teenager and I came home and told my parents that my stomach pain was PID according to the doctor. I didn't realize that it was sexually transmitted. Later I found out the test was negative and I got the IBS diagnosis. -
ARCHIVED Problems With Tinkyada Pasta?
dilettantesteph replied to Joe0123's topic in Super Sensitive People
I found Mrs. Leepers a bit better, but eventually got rid of both as I got rid of most of our processed foods. I can't know for certain that it was gluten cc. We could be reacting to something else. My son and I both seem to be extremely sensitive. He has had just about every test imaginable and was only positive for celiac and dust allergy. I haven... -
It doesn't look to me like she said that it was gluten. She just said that she reacts to carmel coloring.

ARCHIVED Need To Vent About My Symptoms
dilettantesteph replied to Strawberry-Jam's topic in Coping with Celiac Disease
I wonder if you came across some old gluten when you cleaned your flat. That used to happen to me. I'd get healthy enough to have the energy to clean. Then I'd get into some old gluten in some kitchen cupboard and I'd be sick again. It was a cycle that repeated itself several times. I think that I should have hired someone else to do a good kitchen cleaning... -
ARCHIVED Wild Fermented Foods Health Benefits
dilettantesteph replied to YoloGx's topic in Coping with Celiac Disease
I make my own yogurt often. I've made some other lacto-fermented foods with the whey. I don't know any guaranteed gluten free sources for other fermentations. I've tried some wild fermentation but had some problems and haven't gotten back to it. I'd like to hear from people with good results with wild fermentation. What do you do if it gets moldy?... -
ARCHIVED Test For Gluten Intake
dilettantesteph replied to Hells Bells's topic in Super Sensitive People
There is a blood test to check for gluten antibodies. If they are present, you are probably still ingesting gluten. If they are absent, that doesn't prove that you are not ingesting gluten. Have you tried a diet of only produce and meats? You could do that for a week or so to see if things improve. Keep a food/symptom journal. Keep your diet simple... -
ARCHIVED Horrible Symptoms Return After Years Of Feeling Well
dilettantesteph replied to BornTooSoon's topic in Related Issues & Disorders
I become a complete idiot when I'm glutened too. It so unfair, because that is when you need your senses the most to figure out what to do. Did it come on gradually or suddenly? Did you change something in your diet, toiletries, or medications? Maybe one of them made a change. Could one of them contain gluten? Or, could it be that you have become... -
ARCHIVED Been On The Diet, But Still Feeling Sick.
dilettantesteph replied to OxymormonWife's topic in Related Issues & Disorders
To the OP. I'm sorry that you are feeling sick. The best way that I have found to track which foods are bothering is to keep a food/symptom journal. I keep track of brands/sources of foods as well as the foods themselves. It works best if you can stick to a pretty simple diet at first to lower the number of variables. Add things one per week because... -
ARCHIVED Been On The Diet, But Still Feeling Sick.
dilettantesteph replied to OxymormonWife's topic in Related Issues & Disorders
How about this situation: Someone heats a sandwich. When they take it out of the microwave, they accidentally bump it up against the inside top of the microwave depositing some crumbs. Then when you heat your coffee the water forms steam which condenses onto in inside top of the microwave, picking up some bread crumbs and then falls back into your cup... -
ARCHIVED Whole Food Diet (Just Fruit, Veggies, And Meat)
dilettantesteph replied to Newbee's topic in Gluten-Free Recipes & Cooking Tips
Vegetables roasted in olive oil are really good. It is amazing how much your taste buds change after you are on this diet for awhile. You begin to really appreciate the flavors of the combined veggies. This was even the case for my teenage kids and you know how teenagers generally seem to eat a ton of junk food. They actually like roasted veggies. You... -
ARCHIVED Whole Food Diet (Just Fruit, Veggies, And Meat)
dilettantesteph replied to Newbee's topic in Gluten-Free Recipes & Cooking Tips
I've been dairy, grain, and potato free. I didn't starve. Maybe I felt like I was sometimes, LOL. You just eat more of the other stuff. I found a honey I could tolerate and I'd have spoonfuls of that for my special treat. It's kind of hard, but it is really worth it in the then when you can find a diet that is safe for you and you feel in good health... -
ARCHIVED Quinoa
dilettantesteph replied to weluvgators's topic in Gluten-Free Foods, Products, Shopping & Medications
Wow, this was in that reference " It was also recently discovered that some farmers cover their quinoa with barley and/or oats to keep the birds from eating the quinoa while it dries." Maybe that's why I have had problems with some quinoa sources. I wish that there would be more research into farming practices and the impact that they can have on the... -
ARCHIVED Other Food Intolerances
dilettantesteph replied to BabsV's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I have found that I react to some things from one source and not another. For instance, I might react to Lundberg rice chips but not Lundberg brown rice. Or, I might react to brand X rice, but not brand Y rice. I keep track of all that in the food journal. Then I eat what I don't react to. Each new item is a new adventure. It is hard to make sense of... -
ARCHIVED Whole Food Diet (Just Fruit, Veggies, And Meat)
dilettantesteph replied to Newbee's topic in Gluten-Free Recipes & Cooking Tips
I have fruit and yogurt for breakfast. For a more substantial meal I have buckwheat and vegetables with tomato sauce. I also have fruit smoothies, nuts, and cheese. It's plenty to eat. I've been dairy free at times too and still had enough to eat. I've also made soups with my dehydrated veggies. My daughter is on her cross country (running) team and... -
ARCHIVED 4 Months Gluten-Free - No Improvement - Need Help!
dilettantesteph replied to Tarantula44's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I recommend a simple produce and meat diet to start. Keep a food/symptom journal. Keep it very simple at first so that you can tell what bothers you. Eliminate grains and major allergens. Then you can try one new thing per week. It takes discipline at first, but before long you will have a good diet. -
I agree with the other posters. Find a simple safe diet and then add things one per week. Keep a food/symptom journal so that you can track things back. If you keep to simple unprocessed foods it is easier to figure out. Keep track of brands too whenever you can. You will get back to a variety of foods before too long. It is challenging and requires...

ARCHIVED What Has The Support Group Done For You?
dilettantesteph replied to eimzom's topic in Parents, Friends and Loved Ones of Celiacs
I found a support group that has been responsible for my return to health. That wasn't easy since I am sensitive to extremely low levels of gluten. A lot of the things that apply to a typical celiac don't apply to me. -
Maybe. Thanks for bringing it up. I'll pay attention.

ARCHIVED Dealing With Diarrhea And Accidents
dilettantesteph replied to johalex's topic in Parents, Friends and Loved Ones of Celiacs
I had to reply to this because I have this problem when I'm glutened. I can't even get to the toilet when it is just down the hall 10 yards. There really is no warning. I don't know about the volume in his case, but in mine, bringing spare clothes wouldn't be enough. I need a shower too. I get it running down my legs, all over the floor, everywhere. ... -
ARCHIVED Help! Is This Safe Or Not?
dilettantesteph replied to dani nero's topic in Gluten-Free Foods, Products, Shopping & Medications
I think that it depends on your level of sensitivity. Here is what Dr. Rodney Ford has to say about it. Open Original Shared Link -
ARCHIVED Reaction To Rice Milk
dilettantesteph replied to suziq0805's topic in Gluten-Free Foods, Products, Shopping & Medications
It can be hard to tell a food intolerance from a gluten reaction. The important thing is to remember what he reacts to, and not give it to him again. Keep track and as time goes by you will get more information and hopefully be able to figure it out. -
ARCHIVED Think I Glutened My Kid
dilettantesteph replied to Avalon451's topic in Parents, Friends and Loved Ones of Celiacs
Maybe it was the school and not your fault? I hope she feels better soon. -
ARCHIVED Do You Get Really Ornery/cranky/mean
dilettantesteph replied to hillary13's topic in Coping with Celiac Disease
Yes. Understanding that helps me to control it. I realize it is the gluten that is making them seem so annoying, or at least making it hard to put up with it. LOL
