  1. I find that glutening symptoms are worse when I am having my period. You could keep things really simple by eating only produce and meat. Eliminate the major allergens and keep a food/symptom diary. Only eat a few types of food at a time and try to figure out some pattern. Try to keep changes to one a week to give yourself a chance to notice reactions...
  2. You can buy fresh spices and use those, but that won't work for cumin. I had problems with spices too, but I am sensitive to very low levels.
  3. I hope that soy is the answer for you. I had problems with vitamins, and I don't have a problem with soy. A food journal really helps.

  7. I've completely cut out sugar except for a tablespoon of honey a day. I was also treat and candy addicted. When I was a kid I carried around a bag of candy which I ate constantly.   9. Coffee is hard on the stomach. It is probably because you are healed that you can drink it again. I gave it up at first and now can drink it too. It does bother me a bit when I am glutened, but I drink it anyway.

  13. The only things that I know that I react to are gluten and avenin (in oats). It is possible that there is something else that I am so far unaware of. I do seem to react to very low levels, so my reaction would not indicate a reaction for someone else unless they react to very low levels as well.

  15. That does seem to be consistent with getting sensitive to lower levels over time as happens to many of us. Elimination/challenge diets have been the answer for me. One new thing/week only works best since it can take awhile for a reaction to show up. I hope you get things figured out.
