ARCHIVED Honestly Glad To Finally Understand What's Up
ranger replied to jensey's topic in Coping with Celiac Disease
I worked as a chef for many years and thank God I retired before I got so sick. I don't know how people work with celiac. But now, I am considering part-time work but know that I could never work in a restaurant again, much less a bakery. If I were younger, I would consider opening a gluten free bakery (hint-hint). -
ARCHIVED Do Others Get Mad And Agitated When They Have Been Glutened?
ranger replied to Glutenfreefamily's topic in Coping with Celiac Disease
My language turns from that of an angel to that of a truck driver. I was recently cc'd 3 times in 3 weeks ( lots of family picnics) and the last time I was literally throwing things around the kitchen. Glad there were no people around- they would have gone, too! Normally, I'm very quiet and easy-going. Don't feel bad, just get better. -
I like really bland foods - mashed potatoes, bananas, ect. But, I am desparate to gain weight, so even sick as a dog, you will see me shoveling it in!

The other day I made a quinoa salad. Cooked the quinoa in 1/2 C white wine, bal liquid chx stock. Sauteed a bunch of red and green peppers, onions, and mushrooms and some bite-sized ckx breasts pieces. Mixed it all in a big bowl and added fresh cherry tomatoes, lots of fresh basil, and a handfull of romano. Was good cold as a side or warmed as a main...

I've just come off 21/2 weeks of not being able to walk because of my left knee. Not swollen, but intermitant pain and the feeling it was buckleing. I thaught at first it was intensive gardening and getting old, but now not so sure. Right before it started, I had been accidentally glutened 3 weeks in a row! Btw, my garden went to hell!

ARCHIVED Time For New Job? And Other Questions
ranger replied to StrongLikeBull's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I worked as a chef for years. Thank God I'm retired now, because there's no way I could work in a restaurant kitchen where any flour was involved - and most of the good ones do in-house baking. I don't know what I'd do if I was younger and had to work, but I suspect a carreer change would be in order! Hope you figure this one out. -
ARCHIVED Trials For Celiac Vaccine Have Begun
ranger replied to amber's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Dittoe! I eat a varied and delish diet. I eat less bread and more fruits and veges than before, so it's also healthier. My husband also eats gluten free and likes all my gluten-free food. It's not that much more work, but I've always been a from scratch cook. I also hate taking meds and always prefer a natural solution to medical problems. I can... -
ARCHIVED Can You Guys Critique My Evening Please?
ranger replied to jasonD2's topic in Coping with Celiac Disease
Eating out anywhere is a real crap-shoot! Having said that, You need to be eating gluten to take both the blood test and the endo. You don't have to to do the gene tests. You sound like the kind of person that would benefit from a diagnosis, but, remember, you can test negative on both and still be gluten intolerant. I didn't care what the results were... -
Interesting thaught! Joclyn, Are you familiar with Raison Rack in Canton? They have a good selection of gluten-free foods, and a support group that meets the second Sat of the month at 10:00 am. What did you eat that night? I got glutened last week because I was eating chips and dip that I read the ingrediants and was safe but I watched my dgs dip...

So sorry to hear hear about your bad night out. The bathroom is a bad place to celibrate! I have found that even a minute amount of gluten will make me sick, and that seems to be getting worse. I live in Canton Oh. Are you anywhere near hear? Let me know if I can be of any help.

ARCHIVED In Case Anyone Was Wondering About..
ranger replied to Jamie's topic in Gluten-Free Recipes & Cooking Tips
Finally found them at Giant Eagle in Canton, Oh, for $4.29 a box. Seems pricey, but it made 18 cupcakes which is only .24 per. I threw most of them in the freezer so they'll last me forever. Btw, you can frost them and freeze them. I can make a really good gluten-free choc cake, but it is a lot of work. I'm very happy with the product. Now, I need... -
ARCHIVED Need Help With Chinese Appetizers
ranger replied to RDR's topic in Gluten-Free Recipes & Cooking Tips
That's interesting. My sister claims that on Snopes.com no one has a bad reaction to soy. I pointed out that soy is on the list of the top 8 food allergens in the US. What are your dd's reactions to soy? Btw, I never heard of that web sight before, so looked into it. If they told me that the earth was round, I wouldn't bielieve it! -
I agree with raven. It may take some time. You are new to this and I kept getting gluttened after going gluten-free because I wasn't aware of all the hidden gluten and how little it takes for me to get cc'd. And I still do on occasion. I still learn new things all the time.Hang in there!

ARCHIVED Frustrated, Confused, And Angry
ranger replied to lloydke's topic in Coping with Celiac Disease
I quit eating gluten(didn't know any better at the time) a month before bloodwork, so didn't test positive for celiac, but I knew that gluten was the problem. I quit eating gluten and have steadily improved since. I don't need a doc ar anyone else to tell me what my body is telling me. My family is supportive now, because they see the improvement. Please... -
ARCHIVED Introduction And Thanks
ranger replied to Mskedi's topic in Parents, Friends and Loved Ones of Celiacs
Welcome! This forum has helped me a zillion times. At first, I just read and read. It not only taught me the ins and outs of going gluten-free, but also kept me from feeling so alone in the world. People don't know much about celiac's- I know I didn't before I got it. Hang in there and feel free to ask questions- even if you think they're dumb ones... -
ARCHIVED I Freeze To Fast And Get To Hot Help!
ranger replied to munkafats's topic in Coping with Celiac Disease
Thank God! I thaught I was just getting old. I used to winter sports and the hotter the summer day, the better. Now, if I'm out in the sun on a hot day, I feel like I'm going to spontaneously combust, and I dread going from the house to the car in the winter! Guess I'm not alone! -
Can you tell me more about the reduction of your tumors? My friend has metastatic breast cancer. She had a mastectomy, but the cancer came back in her chest wall, liver, lungs, and brain. She is sceduled for surgery to remove the brain tumor on July 16. The chemo has shrunk her body tumors, but it won't go through the blood-brain barrier. That's how...

ARCHIVED How Do I Know I've Succeded
ranger replied to Googles's topic in Coping with Celiac Disease
i'm very small, but I would be starving if I ate as little as you! I do eat meat more frequently than I used to, but in smaller portions. It does seem confusing at first, but get's easier. I've been at it for 6 months and still learn new tricks. This forum has saved my life, because no one I know ( including the medical people) know much about celiac... -
ARCHIVED Has Any One Experienced More Effects From Caffeine After Going gluten-free?
ranger replied to mattathayde's topic in Coping with Celiac Disease
I, too, have gone from 1/2 pot to one cup of coffee a day. Guess it's not all in my head. I'm thinking about just giving it up. My coffeepot went kapute and I'm seriously thinking of not replacing it! -
Did a little research on the role of zonulin on leaky gut and celiac. Sounds reasonable to me - not only the premise, but also some " glutens" that I couldn't explain. But to give up chocolate and coffee? Yikes! But, if it works, I'd do it. It's called the low oxalate diet. Any one doing it or know more about it?

Just a curiosity but my hometown (Canton, Ohio) has the highest per capita number of restaurants in America. I don't think quality comes into play, though. It must be large numbers of fast food joints!
-
I've eaten butter (hate margarine) eggs, and meat all my life. I'm 63 and myHDL is 95 and my LDL is low. I eat small portions of meat, use olive oil a lot and a good amount of veges and fruit at least once a day. I really wouldn't want to take statins. Maybe wean yourself off slowly and keep track of your numbers.

ARCHIVED Baked Fried Chicken
ranger replied to Juliebove's topic in Gluten-Free Recipes & Cooking Tips
I marinate the chicken in buttermilk with some hot sauce and mustard mixed in (to taste) but I'm sure you could use rice milk. Then I roll them in 1/2 corn meal and 1/2 potatoe flakes -seasoned. I usually fry them briefly in a small amout of oil, and then bake them. You could probably skip the frying and go straight into the oven.
