  1. What kind of crackers were they? I think most of us have had a bad situation like this. My mother (also Celiac) accidentally bought non-gluten-free bread and we ate it for a week before I decided to check the bag. So me, my mom and my sister all got glutened.   3. Well, eggs aren't dairy, but I have trouble with them too. They don't give me a sinus reaction so much as drain all my energy, but they're a pain. It's weird. But yes, big culprits are dairy and soy.

If what you say, that your constipation, etc, cleared up after going (mostly) gluten free, then it seems that gluten definitely has something to do with it. I usually start feeling it about 2-3 hours out, and if I have no symptoms within 3 days I know I'm in the clear.
