I am battling with pre-diabetes right now and would like to know what gluten free sugar substitute is best to use. I realize the holidays are right around the corner and would like to be prepared when the time comes to start baking. I do remember early in my diagnosis, trying a sugar sub at my mom's house and felt really bad after. Not real sure if it...

I use 1 part sweet rice flour, 1 part oil and 1/2- 1/4 part corn starch to make a roux. I used the microwave to brown the sweet rice flour and oil, then when to right color, add corn starch as thickener. I used this to make stews and gumbos. It is the best I had since going gluten free.

ARCHIVED Gluten-Free But Still Reacting Bad
Wenmin replied to Gimpwithacause's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Try a probiotic like Align for a couple of months. I was having problems for a while when I decided to get on Align. I've been on Align for 2 months now and feel much better. Got rid of the terrible gas bouts. I could no longer have any dairy due to severe stomach cramps. After a month on Align, I can now eat frozen yogourt. Give it a try, it might... -
ARCHIVED Very Ill. Pls Read My Story (Long)
Wenmin replied to Deniseannette's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Welcome, I just read your story and it seems a lot like mine, except that I suffered over a course of about 20 years with this. For each individual, symptoms vary. Some of the symptoms you experienced do suggest Celiac Disease. Good Luck on those tests! -
I use Southern Homestyle Corn Flake Crumbs Oven style breading (clearly marked gluten free on the package) for oven frying chicken. On the package it says it is for chicken, fish, pork, vegetables, and more. I am sure it would also work with oven fried shrimp. Although, I've never tried it.....

ARCHIVED What Is A Healthy Oil To Add To Cake Recipes?
Wenmin replied to Michelle1234's topic in Gluten-Free Recipes & Cooking Tips
If you are looking for a 'Healthy' alternative use apple sauce in place of oils. I buy the small single serving size and it equals 1/4 cup of oil. Does not give a 'bad' taste to baked goods... Wendy -

I buy a cooked chicken at my local grocery store and debone one half of it. Cut deboned chicken into cubes. Put in large skillet with olive oil and small onion coarsely chopped and suatee' for a few minutes until onion starts to turn transparent. I have been using the same night guard for about 5 years now. I used it pre gluten free and usually brush when I take it out of my mouth in the morning. I never changed mine when I went gluten free. The only time I've had to change mine in when I bite right through it. (This has happened several times in the last 26 years.) I brushed and rinsed it thouroughly...

ARCHIVED Fluffernutter Whoopie Pies
Wenmin replied to MerrillC1977's topic in Gluten-Free Recipes & Cooking Tips
Just by chance I ordered a whoppie pie pan a few weeks ago and it came in the mail yesterday. I was really excited that I would be able to make small versions of cake for myself. (My gluten eating extended family is not too thrilled when I tell them the desert is gluten free)I was planning to make the chocolate cake mix by Betty Crocker and freeze them... -

I realize I need a physicians opinion. I was just trying to gather data before seeing the Doctor. I have an appointment to get my blood levels checked (cholesterol, thyroid, blood pressure) in a couple of weeks. I was just trying to get some data to bring with me. Once I eat breakfast, I feel a little better and as the day goes on, I get better and better...

I think I may be experiencing some really low blood sugars in the morning. I just borrowed a test kit and will use it in the morning. What is the "norm" for blood sugar testing? Some of my symptoms are sleeplessness, dry mouth even though I drink throughout the night, dizziness, nausea, using the bathroom all night long (5-6 times per night), etc....

They have great baked potatoes with toppings. I don't remember which one I got, but I do remember it was great! It had onions, bell peppers, tomatoes, sour cream, etc on it. Just let the manager know you have allgeries and ask them to fix it with new gloves. Wenmin

ARCHIVED Rudi's Bread?
Wenmin replied to shadowicewolf's topic in Gluten-Free Foods, Products, Shopping & Medications
I have also tried Rudi's. Seems to upset me also. I tried a regular loaf of Rudi's Gluten Free bread and also the cinnamon raisin. Neither seems to agree with me. Could it be shared lines? I really wanted it to work for me, because it was such a great bread. Unfortunately, it doesn't seem to work in my diet. Wenmin -
ARCHIVED Unscented Deodorent
Wenmin replied to ejitt00's topic in Gluten-Free Foods, Products, Shopping & Medications
Avon carries a brand called Avon On-Duty 24 hours. They have scented and unscented. They are both great and I have not had any problems with them. This is the only deodorant I can use. For many years now (about 30)this is all I've used. In the past, even before I knew I had celiac disease, I would literally bleed under my armpits if I tried to use any... -
