  1. Great...you'll be able to replicate it...has anyone from Canada given you a cream of soup suggestion? If not, maybe try starting another thread. "Need Cream of Soups Available in Canada" Karen's idea is a good one...when you can't replicate a favorite recipe - post it here - we can help

    ARCHIVED Eggs?

Fantastic!!! It is amazing feeling to be get back physical abilities that were thought to be long lost. I must say when I read your story it sounds like you may indeed have Celiac Disease ALONG with Gluten Allergy - it is possible. The list of symptoms that you have improving over an eleven month period gluten-free sound very much like you may have both...

    ARCHIVED Eggs?

Welcome Scott! You are correct about the lack of proper testing with regard to IgG's. My allergist only ordered them all AFTER I had already determined many of my food intolerances by strict elimination diet/trial and I was under the care of a top celiac doc whom did order genetic testing on me for DQ1, 2, 3 and 8. That being said - Celiac Disease...
  4. Great name You are best off sticking to whole foods when newly diagnosed - meats, vegies, fruits, rice, potatoes. Others will join in with many good suggestions. My question to you = what were your favorite foods to eat before your diagnosis? Perhaps we can help find replacements to make your transition a bit better. Hang in there - the...
  5. Exactly! Do get written or electronic copies of your blood work and endscopy report. If you post them here, many of us can help interpret. Often the best test for Celiac Disease and the only test for Non-Celiac Gluten Intolerance is the complete removal of gluten. Sounds like you have already spent some time gluten free. Perhaps it is time to...
  6. Dinner = Crustless Jack-O-Lantern Pie No, I'm not having dessert for dinner - it is an experiment - really...it is I used plain old white sugar in these pumpkin pies and must find out how the sugar effects me as I have had nothing but agave or honey for many, many, many months. Also a first - substituting coconut milk for dairy in pumpkin...
  7. Vote! Vote! Vote! No matter your view - your vote counts - exercise your rights! California - Let's get GMOs labeled
  8. I can't eat quinoa well heck, I can't eat much of anything so I may not be the best guinea pig to compare yourself to. Quinoa provides me a similar, not identical reaction to that of my gluten reaction. And yes, I can tell the difference between gluten and other intolerance reactions. Many include bloating, but gluten has it's own quirks and...
  9. LOL! I had one like this a while back - 'cept I was eating my doggy's biscuits...woke up worried about the gluten and somehow didn't realize it would be odd to be eating dog bones until much later the following day
  10. Brilliant! I have a few and my daughter's total recently jumped to six. Thanks for the giggle Erin
  11. If you can tolerate vinegar - I make a thick dressing in the blender with olive oil, apple cider vinegar, a couple large handfuls of cilantro, garlic, salt and pepper - honey or agave is a nice addition. Works great as salad dressing or a sauce to add flavor to left over meats or vegies. Have also made it with basil instead of cilantro. Adding flavor to...
  12. We have also used gluten-free crepes as flour tortilla sustitute. They are a nice treat, but sadly we have not yet found anything that makes a perfect burrito yet. I'm currently eating no grain so my experimenting in this area is suspended - my son did learn to make the crepes when he is craving flour tortillas - we live in southern california so burritos...

    ARCHIVED Eggs?

I am a super super sensitive celiac. For quite a few months I thought gluten was contaminating many things that it was not. Eggs is one of the very few foods I can eat safely - I purchase them from many grocery stores with no problem. My daughter has chickens - these eggs taste far superior to any I have purchased and they are likely better nutritionallly...
  14. Chemistry according to G  gle says it goes great together and the combo is suggested as a remedy for hay fever
  15. no, no, no repeat after me "OH Yes! I am eating baaaacon"
  16. If it is just as dark...I'd say you are good to go
  17. I use tea bags...have tried making a second cup with them and it was pretty light -- I do let mine steep for a long time with the initial use, so not much left for the second round. My son's lets his steep for only a couple minutes....his may be able to make it for a second round.
  18. Perhaps you could provide links for the facts and figures you are talking about with regard to food intolerance. I've done substantial research into food intolerance and am just not clear what your goal is. Food Intolerance blood testing is not a reliable way to determine what foods you should avoid. I completed a very strict elimination/trial for over...
  19. I'm holding solid at two cups per day - last week went 1.5 days without and ended up with very stiff, achy and sore for a few days...can't prove it was lack of tea...but I am much improved since I've been back on two cups per day. Tuesday will be four weeks on tea and 5 or 6 with no other supplements. Hard to know it's the tea as it may just be the length...
  20. Love, love, love the new dehydrator - pears and two types of apples great thus far. Looking for way to safely marinate jerky - may just make a few batches for my men without so many intolerances first. The apple chips alone make me very happy. Strange - granny smiths took 6 hours to crunchy - gala and pears are dried at 6, but going to try them go a bit...
  21. I'm confused. Haven't you been gluten-free for many months now? Total IgA and IgG counts aren't going to make a difference to antibody tests -- if you have been gluten-free - you are not making antibodies to be measured.
  22. I'm a bit confused. Are you waiting to go gluten-free until you see your GI for endoscopic results and schedule nutritionist? Given your blood test results, now that your endoscopy is complete, there is no reason to wait. Healing takes time - especially if you were undiagnosed for many years. I encourage you to remove gluten now - if you haven't yet...
  23. Try Gluten Free Cafe too. We've used their Cream of soups as well...again not sure in Canada. There are quite a few Canadian members so perhaps more will chime in tomorrow.
  24. Do you have a Trader Joe's nearby? Their rice tortillas make excellent quesadillas. Rudi's should be coming out with three types of gluten-free tortillas soon too. Tacos and tostadas are made with corn tortillas - we use mission too -- either fried for hard or simply heated for soft tacos.
