Welcome Scott! You are correct about the lack of proper testing with regard to IgG's. My allergist only ordered them all AFTER I had already determined many of my food intolerances by strict elimination diet/trial and I was under the care of a top celiac doc whom did order genetic testing on me for DQ1, 2, 3 and 8. Exactly! Do get written or electronic copies of your blood work and endscopy report. If you post them here, many of us can help interpret. Often the best test for Celiac Disease and the only test for Non-Celiac Gluten Intolerance is the complete removal of gluten. Sounds like you have already spent some time gluten free. I can't eat quinoa well heck, I can't eat much of anything so I may not be the best guinea pig to compare yourself to. If you can tolerate vinegar - I make a thick dressing in the blender with olive oil, apple cider vinegar, a couple large handfuls of cilantro, garlic, salt and pepper - honey or agave is a nice addition. We have also used gluten-free crepes as flour tortilla sustitute. They are a nice treat, but sadly we have not yet found anything that makes a perfect burrito yet. I am a super super sensitive celiac. For quite a few months I thought gluten was contaminating many things that it was not. Eggs is one of the very few foods I can eat safely - I purchase them from many grocery stores with no problem. My daughter has chickens - these eggs taste far superior to any I have purchased and they are likely better nutritionallly...

I use tea bags...have tried making a second cup with them and it was pretty light -- I do let mine steep for a long time with the initial use, so not much left for the second round. My son's lets his steep for only a couple minutes....his may be able to make it for a second round. -

Perhaps you could provide links for the facts and figures you are talking about with regard to food intolerance. I've done substantial research into food intolerance and am just not clear what your goal is. Food Intolerance blood testing is not a reliable way to determine what foods you should avoid. I'm holding solid at two cups per day - last week went 1.5 days without and ended up with very stiff, achy and sore for a few days...can't prove it was lack of tea...but I am much improved since I've been back on two cups per day. Tuesday will be four weeks on tea and 5 or 6 with no other supplements. Hard to know it's the tea as it may just be the length... -

I'm confused. Haven't you been gluten-free for many months now? Total IgA and IgG counts aren't going to make a difference to antibody tests -- if you have been gluten-free - you are not making antibodies to be measured. -

I'm a bit confused. Are you waiting to go gluten-free until you see your GI for endoscopic results and schedule nutritionist? Given your blood test results, now that your endoscopy is complete, there is no reason to wait. Healing takes time - especially if you were undiagnosed for many years. Do you have a Trader Joe's nearby? Their rice tortillas make excellent quesadillas. Rudi's should be coming out with three types of gluten-free tortillas soon too. Tacos and tostadas are made with corn tortillas - we use mission too -- either fried for hard or simply heated for soft tacos.
