  1. You are describing what happens to me when I get soy. I developed a severe intolerance to it about six weeks going gluten-free but it took a while to figure out. Either that or I had it before but didn't notice because I was so sick from celiac disease/Gluten.

  6. Hi CGally, I believe (based off both personal experience and lots of research) that the hunger may be linked more to the carb/starch removal from your diet. My suggestion and what has worked for me would be for you to eliminate the starches completely for a while. No grains or potatoes, and increase the amount of animal fat (non-processed) for a while...
  7. I also would question your caloric intake. However if you are on a restricted calorie diet of some type people often need to supplement with vitamins. Have you checked all of your vitamins, supplements, and medications?
  8. My doctor told me that if I was going to try a gluten-free diet that it needed to be for a minimum of 6 weeks, and it needed to be as close to 100% compliant as I could possibly get. Based on much research in last 10 months since I was diagnosed, I would recommend a minimum of 3 months. You may know this already, but you have to consider gluten in medications...

  12. Classic symptoms for both of you, and yes they come and go. I had good times and bad times as well (days/weeks/months), gradually more bad days as I was getting sicker over the years, then eventually when my celiac disease kicked into full gear after a serious illness I didn't have any more good days until I went gluten-free/CF/SF.   16. Try buckwheat. It makes a great hot cereal (and is not 'wheat' despite the name). I'd suggest until you get a handle on some of the basics and are more comfortable with learning your healthy(ier) body's responses that you stay away from oats for the time being.
