ARCHIVED Feeling Really Depressed Today
Mskedi replied to butterfl8's topic in Coping with Celiac Disease
Can you make the babysitting gig an outing? Take them to the park or an aquarium or something? I'm sure that depends on the time you're babysitting, but if it's possible that may be a win-win. -
ARCHIVED Completely Disappointed
Mskedi replied to newgfcali's topic in Gluten-Free Recipes & Cooking Tips
I used Betty Crocker's mix for pineapple upside-down cake and maybe two pieces were edible. There's definitely a learning curve to gluten-free baking, even when using mixes and tested recipes! Don't be totally discouraged, though -- I just made banana bread from a normal recipe just substituting a gluten-free all purpose flour mix for the regular flour, and... -
ARCHIVED Americans Confused About Celiac Disease, Food Allergies - Natural Products Marketplace
Mskedi replied to Scott Adams's topic in Publications & Publicity
I'm sure it doesn't help that many of us (I know I've been guilty of this) refer to our disease as a gluten "allergy" because explaining the whole auto-immune thing just makes people's eyes bug out -- plus, it takes extra time. I explain it in detail to friends, but I stick with "allergy" for most restaurant servers unless it's a place I frequent. Those... -
ARCHIVED I... But... Look, Can Someone Tell Me If This Is A Lot?
Mskedi replied to MagpieWrites's topic in Coping with Celiac Disease
I thought people like that only existed in movies. The shellfish thing is terrifying! And she does sound evil -- I'm glad to hear you've cut down your contact with her. Getting her a psych evaluation would probably be a good thing if it's possible. Clearly, her rants have nothing to do with reality, so I wouldn't let anything she says get to you... -

ARCHIVED My 2010 Celiac Campaign Has Begun.
Mskedi replied to imracin68j's topic in Introduce Yourself / Share Stuff
I just checked out your website -- you've got a nice write-up on Celiac on there, and the story is very much like my own family's. I'm not too far from you -- maybe someday I'll see you race. -
ARCHIVED Is Low Blood Pressure/being Extremely Cold
Mskedi replied to SLB5757's topic in Coping with Celiac Disease
My BP is on the low side of healthy, but I've always been told it's nothing to worry about. I always get the numbers mixed up, but one is well below a hundred and the other is near or just above a hundred usually. My doctor did decide to check my thyroid the last time I was in because simply because of my positive reaction to the gluten-free diet and my... -
ARCHIVED Not Doing Well Emotionally

Wanna share that pizza crust recipe? My favorite gluten-free pizza place closed down a few months ago, and I haven't had a remotely satisfying pizza since. -
ARCHIVED Extreme Pizza - Gluten Free Pizza And Salads
Mskedi replied to Smeech's topic in Gluten-Free Restaurants
Ooh.. there's one of these not too far from where I work! I'll call them later and see if they have a gluten-free option. If so, I'll try to go this week. I've had the gluten-free pizza at Z Pizza and it's pretty awful. -
ARCHIVED Can Anyone Recommend A Gluten Free Soy Sauce?
Mskedi replied to David in Seattle's topic in Gluten-Free Foods, Products, Shopping & Medications
When I wrote the post originally, I wanted to add a picture, but I needed to charge my battery so I was going to do it later. I guess I could have thought of linking it. I blame being tired. Here you go: This one is pretty all-purpose. I use it as I would any other soy sauce in fried rice, stir fries, korean stews... you name it, it works: Open... -
ARCHIVED Can Anyone Recommend A Gluten Free Soy Sauce?
Mskedi replied to David in Seattle's topic in Gluten-Free Foods, Products, Shopping & Medications
If you're going to 99 Ranch, you can pick up gluten-free soy sauces there in HUGE bottles for a fraction of the price of the San J stuff. I think it's tastier, too. Reading the labels the first time through might be a pain, but there are quite a few that are made with rice instead of wheat, and if you want dark or sweet soy sauces (for certain recipes --... -
ARCHIVED Lord's Supper-Communion- Questions
Mskedi replied to tiredofbeingsickandtired's topic in Gluten-Free Foods, Products, Shopping & Medications
I bring my own bread and skip the juice because we do communion by dipping, so it's all contaminated. Maundy Thursday I forgot my bread (oops!), but the juice was in separate cups, so at least I got that. I figure if I've got one or the other, I'm good. -

ARCHIVED Could Use Your Opinions
Mskedi replied to ali11's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Hopefully you'll figure out what's going on soon. I don't know how bad your nausea is, but when mine is annoying, but not quite debilitating, I can usually down a small fruit smoothie made with yogurt, soy milk, and frozen berries & fruits. I think the fact that it's not solid and it's cold helps it stay down. Several months ago when I had a particularly... -
ARCHIVED Good Experience At Pei Wei

Ooh... that's just down the street from me. I've thought about going a few times, but never actually followed through. -
ARCHIVED Sticky Social Situation
Mskedi replied to sandsurfgirl's topic in Coping with Celiac Disease
I'm sorry you felt you had to not go, but in the same situation I probably would have gotten so nervous about it I would have honestly felt ill. My family knows a lot about Celiac (nearly every household has at least one person with it), so I trust their foods; some of my close friends are equally knowledgeable. Beyond that, though, I just eat my own food... -
ARCHIVED Do You Feel More Mentally Healthy After Going gluten-free?
Mskedi replied to TotalKnowledge's topic in Coping with Celiac Disease
My anxiety and depression have improved -- I don't know if that's directly related to the gluten or to the fact that off gluten I can actually sleep (insomnia is my primary symptom when glutened and can certainly be a factor in mental health -- the GI stuff is no fun, either, but I'd take that anytime over the days of no sleep). I got glutened for the... -
I would say I eat to live for breakfast and lunch, but I live to eat for dinner. I've got to have some variety and I enjoy getting creative, but one creative meal a day is enough for me. Occasionally I'll make a creative weekend breakfast. That has remained the same for me all my life -- it was that way before I went vegetarian 14+ years ago and before...

ARCHIVED Gluten-Free Vegan Desserts?
Mskedi replied to gintare519's topic in Gluten-Free Recipes & Cooking Tips
My favorite vegan desserts are cornstarch chocolate pudding (I just use soy milk instead of milk -- there are recipes all over the internet for this one), banana bread (no need for the eggs -- just use some Ener-G egg replacer and substitute normal flour with your favorite gluten-free flour or blend), and mango and sticky rice (this one is naturally gluten... -
ARCHIVED How Do You Know How Long You'Ve Had It?
Mskedi replied to dube's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I think I've had mild symptoms my whole life (gut-aches after eating, anemia, and insomnia). In the last six years I started having noticeable GI problems, but it was such a gradual development, I just chalked it up to getting older (I feel kind of stupid about that now). Then when I started working on my MS while teaching full time, everything got so... -
You are one awesome person. Good for you for standing up to her, and good for you for not punching her in the face (which even I, a pacifist, would be inclined to do).

ARCHIVED My 8 Year Old...too Late For Celiac Diagnosis?
Mskedi replied to KekesMom's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
My grandmother was in her 70s when she was diagnosed -- eight is DEFINITELY not to late. And if you catch it early, your 8-year old should be spared some of the pain many on this board dealt with for decades. Good luck. -
Wow. Like everyone else, I'm outraged. It sounds like you're having a skin reaction -- can you take a picture of it and send it to your evil cousin? And, yeah... that's evil. I've been a vegetarian a long time, and there are some people out there who think it's funny to trick vegetarians into eating something with meat (say, chicken broth). An even larger...
