In Living Gluten Free for Dummies there's a flour tortilla recipe that works great. I've subbed several different types of flours and flour mixes and have yet to make a bad batch. Maybe that would be something to look into. -

I e-mailed them as well. This makes me think back to when I was a Girl Scout. How awful would it be for a Girl Scout with Celiac to have to carry around all those boxes of cookies without ever being able to try one? That, and every meeting I remember, we had cookies or some other kind of gluten-y treat. -

If the restaurant you're going to is one you trust and will cater to you, that's one thing, but if you know you can't eat... why not bring your food? Since it sounds like you regularly went there, have you built up a rapport with any of the employees? If so, maybe they'd be more likely to be extra careful with your food. I'm not familiar with the chain itself, but it doesn't sound anymore likely to have cc than, say, In-N-Out, which also only sells burgers and fries. My sister & I haven't had any...

I have fluorosis discoloration on my teeth, but maybe that was a misdiagnosis. I know my dentists have all seemed pretty surprised that someone growing up in America would have fluorosis at all. It'd be interesting to look into, but the damage is done, so there's no real rush. -

My hesitation to agree there is that my grandmother was diagnosed in her mid-70s. Up until the hospitalization that got her diagnosed, she'd been healthy and active with what she described as a chronically upset stomach. Then she started losing weight (she'd already been thin her whole life) and was admitted to the hospital when they realized she was malnourished... -

I liked the article -- the only word I can think of to describe it is calm. It doesn't make the diet sound impossible, nor does it try to get controversial, even though it mentions how care in the US is woefully behind care in other countries. Overall, it sounds doable despite the costs involved, and I like that it ended on a positive note. -

I hope your sleep gets under control soon. I've always been an insomniac. A good night for me involved four hours of sleep. Five was miraculous. Usually I got one to three hours, and I ended up with some serious problems last year because I went several days in a row without so much as a minute of sleep. Sleeping pills just made me hallucinate. Fun. ... -

My kitchen is gluten-free right now and my husband is being really, really supportive. Sometimes he talks about how we could make it safe for him to have some gluten ingredients, but I know he's aware of cross-contamination, so if he decides to do that, he'll be careful. It's definitely good not having any gluten in here at all while I get used to this. -
