Since you have been off for so long, you need to heal again. Eat clean and simple and avoid gluten free foods for awhile. Don't be surprised if you have withdrawals get sicker for a bit. Most of us do. -

I can't even do Udi's bread right now. I haven't figured out what bothers me. I don't really eat bread, but I do make a simple one that has the consistency of corn bread. I use the Arrowhead Mills Gluten Free baking mix. It's the simplest baking mix I've found ingredient wise. I also make pancakes out of it and they are good. Most Bath and Body Works... -

Living Gluten Free for Dummmies. Funny, accurate and helpful. I bought another book- The First Year, Celiac Disease and Living Gluten Free. The info seems good so far, but my word that is the most poorly written book. It's dry, stale, boring, and not concise enough. I feel like I'm eating cardboard trying to read it. If you eat out, tell us where you normally eat and what. There is hidden gluten in wheat starch glaze on fast food chicken. Some beef will be marinated in stuff that has wheat. Meat can be marinated in beer. Soy sauce is a culprit. -

Most people can't handle gluten free substitute foods at first. Your gut is damaged by celiac and it takes a lot of energy to heal. The best thing to do is have a simple diet. Meats, veggies and fruits, rice, etc. Eat foods that have few ingredients. Give your body a chance to heal. Also dehydration and electrolyte imbalance is a HUGE issue for us. The... -

Did you see my new thread? I challenged xanthan gum and it was fine. So now I have to challenge tapioca and see if it was that. It also could just be my damaged gut having trouble digesting stuff. -

I have to respectfully disagree with that. Some people don't feel a difference for awhile and some of us get sicker before we get better. Depends on how sick you were and how long you've been undiagnosed. I've had celiac my whole life and was misdiagnosed until recently at age 40. I thought I was reacting to xanthan gum so I took it out of my diet weeks and weeks ago. I took out all gluten free substitute foods. Exactly. They're all being misdiagnosed. Maybe you need to start looking for guys with IBS because eventually they'll end up being diagnosed as celiac most likely. -

I would talk to the bride or groom, whichever one you know, and offer to speak to the venue yourself so they don't have an added job to do and so you can make sure the place understands what you need. Weddings can be long affairs and it might be hard not to eat there. -
