  1. if Celiac shows up on a blood test, you're Celiac. Doesn't matter if they consider it "mild" or 99% positive. If you continue to consume gluten, then the damage will get worse, and the next blood test will be more definite. Why cause yourself (or your child!) more damage?
  2. unfortunately, plain ol' gluten intolerance doesn't show up on a blood test. But that doesn't mean that you couldn't benefit from a gluten free diet anyway. Celiac disease is the advanced stage of gluten intolerance, and by the time you actually test positive for Celiac disease, the damage is done. Some damage is potentially irreversible. So my advice...
  3. I survive quite nicely on a rather low carb diet thank you very much. The old myth that you need 200 carbs just for your brain to survive is just that. A myth. The Westernized government enforced food pyramids are bass ackards. And yes, 2 cups of rice would be an eye popping side dish! Holy cats! You'd explode if you at that much rice at once!
  4. where'd you get the tater tots? Were they frozen, or from a fast food place? Either way, they were likely fried in the same fryer as breaded foods like chicken fingers or something. Have a real potato instead.
  5. I don't have to "commute" to work. I live only 4 miles away, so it's less than a 10 minute drive each way. Even when I did commute though (I used to live/work in Toronto. Traffic there is HELL!) I usally made time to cook. I would rather save my money than eat take-away every day. I know a lot of people who make a lot of good use of crockpots though...
  6. I've been gluten free, AGAIN, since December 14th, and immediately noticed a difference in my belly and wasn't being constantly followed around by that cloud of noxious gas all the time! I did a 8 week gluten torture challenge to get the definitive diagnosis and appease my husband who figured I had only given up bread and junk food to make his life hell...
  7. HA! Sounds like my house. Except my husband won't even bother to have a gluten free area, or a place for him to have his foods. I definitely get contaminated all the time. He made pancakes for lunch today. Then looked at me and said "oh, is that gluten stuff in these?" ugh...

  9. When in doubt, don't eat it. Contact the food manufacturer and ask them specifically if the product has any wheat, barley or rye in it.

  11. eating out in restaurants can be tricky. You HAVE to talk to your server, and if possible, the cook as well and have them check labels on EVERYTHING. If you're going to a chain restaurant, check their website before you go. Most of them list ingredients on their websites.   15. what do you mean by "stopped working"? Have you had blood tests that revealed vitimin deficiency despite taking vitimin supplements?
  16. when I was doing the gluten challenge I noticed that I was always hungry (despite the bloating and gastric discomfort!). No idea about your blood tests though.
  17. read the labels on EVERYthing in your house. It is likely you're getting hidden glutens in some packaged foods, (condiments like salad dressings, mayonnaise, yogurt etc...) and/or cross contamination if not everyone in your home is gluten free and is not careful about cleaning up after themselves.   18. I have a lot of problems with vertigo myself, and it's been a lot of trial and error to figure it out. I find that ensuring I get enough salt (when you cut out packaged foods, you cut out a major source of salt!) and enough potassium I get fewer bouts of dizziness.   19. No, it's definitely His house. He inherited it from his parents when they died. His entire family, have made it quite clear it will never be mine. I just live here. Plus, I moved from Canada to the US to be with him. When I leave, I'm going home to my own family.
  20. I used to have problems with my fingernails (as well as my hair falling out by the handful) when my thyroid was out of whack with Grave's disease. Malnourishment does show up in your fingernails after a while though, as that's the last place your body is going to send fuel. Thyroid problems and Celiac are common partners apparently.
  21. where exactly "overseas" where you? From everything I've read every single European country is far more cognizant of Celiac Disease than the US or Canada are. I would find it hard to believe that it's never been heard of.
  22. there are 2 auto-immume thyroid diseases, both can be linked to Celiac disease. Hashimoto's (hypothyroid) and Grave's disease (hyperthyroid). There is a large co-relation to Celiac disease and ANY other auto-immune disease. I have had Grave's disease. It is currently in remission.

As your guts heal you'll start to absorb nutrients from the foods naturally, but you have to make sure you're eating the right foods. The fact is that the grains we eat these days are so devoid of all nutrients that food manufacturers have to PUT BACK all the stuff they've taken out of it in order to over process it to get it to our tables.
