  1. that's what I make,too! I don't eat enough bread to finish a loaf before it dries out, after getting lost, in the freezer. Then I make bread crumbs.
  2. Did you use the same old colander to drain them? Its very hard to get every little hole clean from sticky noodle residue. And what else did you eat with them? What did you eat before them? It takes much longer than a week to heal. It could just be a messed up GI system.
  3. And that points out the big difference between Celiac and wheat or other allergies, doesn't it? Sometimes, contact is enough to give you the allergic reactions like stuffy nose and rashes. And it isn't like, when you are trying to figure out what a kid is allergic to, you say "Here, Kiddo. Suck on this piece of metal or plastic & let's see what happens...
  4. Yea... it sounds like it can be hard to figure out what exactly someone is allergic to. Sounds like tests aren't reliable.... its just sort of an elimination/observation thing.
  5. Oh... well that is different! Your kids have some allergy issues - who knows what part of the retainer she is allergic too. I have heard of kids having allergic reactions to retainers. When I was a kid - I think it was the metal used in the metal parts? That was back in the Stone Ages - hopefully they are made of better stuff these days. If she needs...

  7. I think the USDA definition is something like water, salt and chicken juices. You could probably look that up. You can always tell if they have added salt water by the sodium content. Unsalted chicken is about 45mg of sodium per serving ( naturally occurring sodium). Anything much higher has salt water or salted chicken juices added.

  9. I don't think there is much that a Celiac can eat at Taco Bell - if the people at Taco Bell understood celiac. But the chances of cc are so high. And have you checked TB's website to see if those things are actually gluten-free?
  10. You have 1 and 3 yr olds? Travelling, pot lucks, etc are all hard with that age - not even talking about Celiac here. Neither is really old enough that you can let them go while you get out the picnic or go to the bathroom!   12. What do you mean you have been eating yeast? Like regular yeast in gluten-free bread? or something different? The regular yeast used in baking gluten-free bread is gluten-free. Most yeast you buy at the grocery to bake with is gluten-free - there is one odd brand that says it contains wheat. Brewer's yeast is usually NOT gluten-free.
  13. Not sure an "allergy Action Plan" works for an "as needed" employee. Celiac isn't an allergy either. I still think just speaking to the employer would be enough.
  14. I used Quest and they do give a very detailed genetic report. And my insurance covered it with no question or extra work from the doctor. If you have to pay out of pocket - they were about $300. You can call and ask. To be fair, while some of that other place's tests are not considered scientifically valid, I haven't heard that the genetic one is wrong...
  15. That is a health department issue. The best strategy has been to ask for the burger plain or on lettuce. Keep the gluten-free bun in your pocket, purse, etc. Add your own bun at the table.
  16. I would just ask the boss first. If that is the school principle or someone who is in charge of subs for the school district. Usually, it's really that simple.
  17. Just a comment on Five Guys . They are usually pretty Celiac friendly if you don't eat the bun. The fries are the only thing fried in the fryer and most have an "allergy" protocol.
  18. I haven't heard of this before. Everyone has to have a key to go to the bathroom? I would just ask the principle or if you have some sort of boss in the school district administration. Would the next door teacher let you use her key? What are you supposed to do if a kid needs to go?
  19. MY thought was... If you don't feel a gluten-free diet is important for you... Why would you think it is important for the child? I am glad that your wife is watching over him and feels it is important. You are an adult and a nurse and can read and understand the medical information.
  20. Well....this scares me for your child's sake. If you think celiac Disease and the gluten free diet as the treatment is a bunch of BS...... I am not sure how we can help you. I wish you well. And I hope you do the right thing for that child who can't decide for himself.
  21. Did you check the link I gave you? It is an easy to understand website. It states that you must always be gluten-free, even if you think you have no symptoms. If you are changing your child's diet, you can go gluten-free with him. If managing your illnesses and his and your other kids and your job and school are too much, maybe you need to cut back...

  24. For your son's health - PLEASE take a few minutes and read some info about Celiac. He will depend on you to keep him healthy and "ignoring" the gluten free diet will make him sicker and sicker. I would think that keeping yourself healthy would help him, also? Open Original Shared Link
  25. Good for you! A lady needs the iron from the beef! ( that's how I rationalize it ). Lol We had some smoked meat in the freezer and we made sandwiches with lots of BBQ sauce and some Ore Ida oven fries.
