  1. Salsa ingredients can be harsh for a lot of people - has nothing to do with Celiac. I eat salsa most days fine. Coffee is acidic to the stomach, too. A little dairy in it helps a lot of people with that acid in the stomach. I bet that dairy cheese with salsa probably helps that, too.   6. Perhaps you should get a new MD who will test you for Celiac disease? But, if you have been basically gluten-free (just a small slip occasionally) the tests might be negative. You have to be eating gluten to make enough antibodies to show up on the tests. I can't really comment on any tests that an ND does as they are usually not the ones that are...

  10. Sounds like a great idea. For snacks - could you leave a little plastic box with a tight lid? And a big " Across's stuff! Eat at the risk of death or dismemberment"? Put some individual packs of Fritos or fruit snacks or nuts or whatever? Or just always have a little snack in your purse or car when you go over? Maybe she has something you could have...

  12. I have seen corn noodles but not lasagna. Could you maybe make lasagna but with a thin, compact layer of Deboles corn pasta? Or thin slices of potatoes?

  14. Actually, that is against company policy. The fries/ hash browns are cooked at a different temp than other foods. Also, because fries are McD's pride and joy, cooking something else in the oil will change the taste. It is very important to McD's to maintain the integrity of the fry flavor.

  16. Cathy, This got me, too, when I was new to Celiac. There are a few items that are derived from wheat but don't contain measurable gluten. I think this flavoring falls in that category. But in the US, we require it be labelled with " wheat " even if it has been tested and certified as gluten-free.

  21. I know a lot of states/ counties health codes do not allow the consumption of food where food is prepared. It isn't up to a store to decide if that should be the rule. That means you can't eat in the food prep area, even if no food is currently being prepped. Do restaurants staff eat in the kitchen at the end of the night? Probably but it would be against...

  23. I get the pre- cut pineapple, too. Some it it is even cut at the " pineapple factory " before it gets to a store. The behavior Raven described should never happen. It is against all health codes. Hopefully, she reported that or scared the management into compliance? Lol.
  24. Have you talked to the " program" yet? See what they think? Will you be in a family home or a dorm or your own apartment? Will you be able to shop and cook for yourself?
