What I am trying to say is, it's a little early to " be glutened". If that is the case, you haven't been gluten-free for 2 days. You need time to get the hang of the diet, heal, get your intestines back in working order. That doesn't happen in 2 hours gluten-free or 2 weeks gluten-free or even 2 months gluten-free. You have been trying gluten-free for 2 days. Give yourself time. You don't even know you have any issues with gluten for certain. if I remember. Maybe its the dairy. You can't really be "glutened" when you haven't really been gluten free and healed some (assuming Celiac is the issue).- 19 replies

You have to do the endoscopy to get a sample of the small intestine. I don't think they have figured out any other way to do it. Yes, Celiac disease can kill you. If you can't absorb any food and vitamins, you will die. -

Just read the ingredients. Wheat must be clearly labelled. Rye isn't in much but bread or crackers you wouldn't buy because of the wheat in them. Barley or barley malt will be labelled because it's an ingredient. Oats must say gluten-free or they may contain wheat. There are some weird kinds of wheat but they aren't very common. I think metal ones clean better than plastic.

You should be able to just wash it well. The one I have has a very smooth surface, inside and out. It doesn't have a bunch of crevices that are hard to clean. If you had boiled pasta in it, you may need to scrub extra. Maybe boil water a few times? I find vinegar " melts" sticky flour so it can be washed away.

Have you seen the little lunch crockpots? Does he have a fridge and microwave at work? He could take left- overs. He could take salads with meat and cheese. Pasta. Either way, you will know something. My nephew's blood test was negative and they just stopped looking for anything else. I see this as a good sign, that, even if its negative, they want to help figure it out. But, honestly, a positive Celiac diagnosis might be better. You know what it is and can start making him better. Use the weekend to make a list... -

If possible, I would call back and talk to a nurse. The person who makes appts can't tell you. Make 2 lists of questions - one for negative & one for positive. I know I forget what I wanted to say when I'm there. -

You might check your local grocery stores. Here, some of the HyVees have lots of gluten-free breads, flours, etc. Whole Foods is often cheaper. Safeway has there own line of gluten-free products. You might want to check several different Targets, Walmarts, Groceries. Some carry different things than others. Look for "regular" foods like Chex or...- 19 replies

If the results are positive, they probably want to discuss your next steps. If the results are negative, they probably want to discuss your next steps. I hate when they won't say "The tests were negative. We want to discuss where we go from here." Or the reverse. Would give you time to think of questions. You have been gluten-free for a year? No point in taking the blood test. Even if you have celiac it should come back negative. You need to have been eating gluten for a while to make the antibodies that show up in the blood test. It's a shame doctors have no clue. -

Lots of foods are gluten-free and df. So you should be able to do most of your shopping at Walmart. Walmart seems to have a few gluten-free pasta choices. Not sure about bread. I have seen Udis at Target.- 19 replies

You mean the little candy bars? I eat those. Not the ones that have gluten in every size - like Krackel bars. I haven't noticed a change in the ingredients between the big and little chocolate bars. Pure yeast doesn't have gluten. I think there may be a baking enhancer yeast that isn't gluten free but it will list the ingredients. Brewer's yeast usually isn't gluten free as its a bi-product of beer making. You wouldn't use brewer's yeast for a bread machine.
