    I made this apple cake with tart Granny Smith apples and served it with cinnamon ice cream. We thought it would be great as a coffee cake. ( OK....I sampled it for breakfast with my coffee ).     I have a hard time finding lasagna noodle, too. I was thinking of making the lasagna with layers of penne instead. It would have the flavor of lasagna but be more like a casserole or baked pasta.     What I tried to explain in my post is that gluten-free in dog food is not the same as gluten-free in human food. Pet food manufacturers have a different definition of gluten-free.
