  1. you need to eat a full gluten diet for 3 months before having any blood tests or an endoscopy with biopsies. If eating gluten free makes you feel better, you can do that without a diagnosis. Its just up to you what works for you.
  2. I use canned beans & Williams seasoning mix. I have never made chili with gluten/ wheat in it.

  4. In the US, there is no real law about gluten-free. The only thing is the basic law of not to be completely misleading. For example, labelling whole wheat bread as gluten free.
  5. There are a few freeze dried backpacker foods that say gluten-free on them. Don't know if you want to go this way, but my son was telling us about groups & bicycle clubs that ride across the US in the summer. Someone drives a van or truck so you don't carry much on your back. You also have the van and others in case you get hurt.

  9. Probably. Read the ingredients. I don't eat it. If its a Kraft or ConAgra one they will be certain to spell it out in the ingredients.
  10. I think most of them in the US are gluten-free. Check mustard for beer. I use either Heinz or Hunts ketchup. I use Grey Poupon mustard, but read the ingredients because they may have a "beer" version. Something helpful for you is : ConAgra (lots of brands will say ConAgra in the small print)& Kraft clearly label any gluten in the ingredients....

  13. Might I suggest you up his life insurance & disability insurance? Suggesting it to him might make him realize its serious. I have given up in my family. They just laugh. My brother who has Raynauds (sp?) which is an autoimmune disease, just laughs. He went gluten-free with his wife for a couple of months because she has a lot of allergies...
  14. Try Cerave cream. Its gluten-free and the dermatologist recommended it for my hub's extremely dry finger tips. You probably don't want to try the Calming products if you really want to be certain of gluten-free. Oats are not gluten-free unless they say that. They are ususally contaminated with a little wheat.
  15. Cook some gluten-free noodles in gluten-free chicken broth & don't drain. A really simple chicken noodle soup. Or cooked rice in the chicken broth. If you are really ambitious, throw shredded carrots ( chopped take to long to get soft)& really small chopped onion in the broth while you cook the rice or noodles. A bit of garlic or garlic powder...

  17. We don't know anything about your cafeteria. You need to check with them. Go to the cafeteria manager and the Director of food services.
  18. When the Univ of Chicago Celiac Center does it's free testing, they require you be on a regular gluten diet for 3 months.
  19. But....but...my cider is gluten free! Could they serve it in a different glass. I went to a nice bar ($$$) with cider on tap. It comes in a glass that looks like a brandy sniffer or fruity drink glass. Maybe they could put yours in a soda glass, carry- out cup () or margarita glass? Tell them extreme allergy to beer.
