I use the rice/tapioca wrappers for burrito's. I just wet them until plyable and fill with your favorite eats. They don't taste like anything and they hold-up pretty good to the filling. Cleveland Bob -

Anybody eating the Caramel Peanut Detour Energy Bar? I saw that Trader Joe's lists them under their gluten-free Bars section online but, was wondering if anyone had anything to say about them....either good or bad (Reactions, etc.) The ingredients seem okay but, I would like to double check before I risk a weeks worth of feeling lousy. Amanda, First I would bring some snack items with you from home. This will get you through the actual traveling to your destination. The airlines and airports have practically nothing for a celiac disease person to eat! Then (If you are staying for any length of time) find a local health food store in the towns you are traveling to and stock-up on some...

This thread sounds so familiar. I had asked about the same thing last year when I first came down with celiac disease symptoms. It's a good suggestion to take the liquid vitamins (B complex and others) as they not only get into your system but, do so quicker than tablets. Debbie/Tracy, I (luckily) only have celiac disease at this point. I just had my 1-year check-up done and all my numbers look good (Knock-on-Wood). It's not been an easy year but I do feel encouraged that all my sacrificing has helped. Debbie, Hello fello Buckeye. I live just outside of Cleveland and have been gluten-free for 14-months now. I know the frustrations involved with being Celiac but, it's better than the alternative. I'm no cheese expert but, as I understand it the mold in Blue Cheese is started from bread. I don't know the details about how much (if any) gluten gets transfered over in the making/aging process. I prescribe to the Juicing = better asborption theory. I have been juicing on-and-off for the past year (It is a lot of work but it's worth it). The expense can be great but if you're diligent you can find ways to cut-the-costs. I'm a left side pain person. I suffer from lots of gas bubbles and get pains anywhere from the lower abdomen up to the armpit and pectoral area. I've been to the Dr. many times and even wore a Halter monitor for 24-hrs to check-out the old ticker and everything is fine (with the exception of the gas pockets). Interesting point. I think you are right with all the gluten involved in traditional holiday celebrations. Thanksgiving weekend '04 I almost passed out from all the stuffing, pies, cookies, etc. I was diagnosed 1-1/2 weeks later in early December '04 and have felt a lot better this holiday season. I, too, didn't have any GI symptoms before being diagnosed. It just sort of one-day appeared and boom....celiac. Well, it's been one-year since my diagnosis and I am feeling better. We all know how tough it can be to start being gluten-free. And, the progress can be slow especially at the beginning. We all get the cravings for our favorite (Past) foods...
