I usually don't drink fancy mixed drinks. It's too hard to be certain they are gluten-free. I'll order a martini, gin & tonic, a good sipping whiskey (distilled alcohol doesn't bother me), a glass of wine, or hard cider. -

IMO the whole nutrition labeling thing is misleading in the first place. This is food we are talking about, not fats, carbs, and protein. Yes, it happened to me once. I bought the wrong crackers at Trader Joe's. I ate one and thought "these taste different" then checked the box. Whoops. I waited for two days for the bomb to drop but nothing happened other than a little anxiety. That's rare for me. Usually I react with a bunch of GI trouble. Did you dodge a bullet recently? -
If you're willing to drive a bit you might like Warren Celiac Center at UCSD. I'm a little confused by your post, though. If you have positive celiac tests and get sick to the point of being hospitalized eating gluten, what's the issue? You do not need a doctor's help to stick to a gluten-free diet. Yes, I'll second that. You need to get the lyme treated, whatever it takes. Untreated lyme is serious business. I can see the appeal of elemental food, but I think you also need to be evaluated for refractory sprue. -

Ignore her pain? I suspect you have figured out her issue. It would just be a shame to take her gluten-free and have it work, then be in a position where you realize she never got proper celiac testing. I might call the GI's office and ask them to fax/email the celiac panel results and biopsy report. They should be the ones to fish that stuff... -

Usually, "gliadin peptide" is the new IgG anti-deamidated gliadin. The old gliadin that is not very specific is usually labeled "anti-gliadin". I don't see any limbo here. I believe you are celiac. You are wanting to think you're negative to blood, but I checked your old posts. Your positive test, gliadin peptide IgG, is 99% specific for celiac, not simple gluten intolerance. Gliadin peptide IgG is the most sensitive test, which is why the others were negative. You can't tell anything about celiac one way or the other without fecal TTG. You mention a biopsy but did she have a full celiac blood panel including deamidated gliadin IgA and IgG?
