  1. Interesting stuff, Aly. I notice Wikipedia mentions that einkorn may not be as toxic to folks with celiac and gives a reference to this super-interesting study. They took a biopsy from people with celiac disease and exposed it to modern wheat or einkorn. There was only a reaction to modern wheat. Open Original Shared Link Spelt is old too, and supposedly...
  2. That vascular stuff on migraine is pretty old. This is a nice overview of the current understanding (if you can call the jumble of ideas "understanding" ). Open Original Shared Link
  3. Boy, that's encouraging! If you're feeling a lot better off gluten and a lot of celiac symptoms resolved I'd sure be thinking in that direction if I were you.
  4. That's my kind of solution, since I'm allergic to cats and hamsters. Sounds like you're all set with the pets then.
  5. You might want to get hold of Natasha Campbell-McBride's book if you're on antidepressants, especially if the bloating comes back when you test starch. (I goofed earlier. It's Natasha Campbell McBride, not Patricia.) Part of what the GAPS diet is supposed to help with is depression. I have more energy low-starch and my mood is overall better. Here is...
  6. That's encouraging. Maybe the reaction was to something else.
  7. People with celiac disease absolutely react to kamut, spelt, and other ancient grains, and they have plenty of gluten. What he did is interesting but it's obviously not generalizable. I have a friend who is a gluten-intolerant botanist and she even reacts to wild triticae grains she's collected. I haven't read the book to comment further.
  8. Depends on how gluten-sensitive he is. I'd be inclined to store the food somewhere else. When I had gerbils we kept them in an aquarium and the mess was pretty well contained, though. We have had board members react to gluten in pet foods, especially if a dog eats gluten food and then comes over to give you a friendly lick on the face. The cat eats gluten...
  9. You can always add fruits back if you start feeling better.
  10. If there's nowhere you can buy it locally, there are plenty of places you can mail-order bread. The sponsor of this message board, Open Original Shared Link has a wide selection. I'd recommend Udi's or Rudi's for sandwiches. They have a good texture. You can also make bread from a mix like Bob's Red Mill or Pamela's. Remember that cut veggies, plain...
  11. Poor kiddo. You can't blame yourself. No matter how vigilant we are, gluten seems to slip by. You are doing well if your son only gets into gluten once a year! He will be miserable for a bit but he will be fine. Pepto-Bismol is my remedy of choice for gluten. As Benshell mentions, you can use this as a teaching opportunity. You need to be sure your...
  12. If the EPA is testing, they're keeping close-mouthed. I would not be surprised to see contamination in Pacific fish either. It's not only currents but some species like Pacific Tuna migrate to and from the Japanese coast.
  13. Wow, I guess they don't export all the dumb doctors to the US. At least the one in Japan was decent enough to apologize to you
  14. That TSH would be high enough for me to have trouble, and you're outside the new range of 0.5-3.0. That needs to be checked again for sure.
  15. Makes sense. My muffin cups don't have a ridge but I know the kind you're talking about. I never even thought of flour dust with my mixer and I'm fine. Clean the vents and run the mixer outside or in the garage for a bit. If dust accumulates on the vents you might replace it. I would be really surprised if it does though. You may end up...
  16. Gosh that sounds so much like me. I'm trying Failsafe diet at the moment, which means I have lentils, rice, and brussels sprouts coming out of my ears. My Dr. thinks part of the issue may be perimenopausal migraines. Ugh, yuck. I want my brain back, please.
  17. Yes, seemingly healthy foods can make you really sick if it's not the right food for YOU. I started getting worsening migraines on the seemingly ultra-healthy GAPS diet. I suspect that I was getting too much natural MSG in the bone broths and homemade sauerkraut. I reacted to tomatoes and suspected nightshade sensitivity... until I learned that tomato...
  18. There are no nasty surprises in chocolate, thank heavens. As others mentioned Lindt truffles have barley malt, and in most chocolate with "krispies" the crisp rice has barley malt in it. It will be clearly listed in the ingredients. Occasionally you'll see a label warning "made on shared equipment with wheat". It's so easy to find chocolate without...
  19. Allergy to wheat, celiac disease, and gluten intolerance are three different conditions involving different parts of your immune system. Celiac is an autoimmune disease and it's important to know whether you have it if you seem to be reacting to gluten. There are allergy tests, celiac tests, and to check for gluten intolerance you eliminate it from your...
  20. You can sub tapioca starch, potato starch, or arrowroot starch. Tapioca is probably the most popular.
  21. Glass is fine and the muffin tins only need to be replaced if there is baked on crud you can't scrub off with steel wool. Also remember you can make his muffins and cupcakes in paper liners. Basically if it has a hard, smooth surface you can scrub within an inch of its life, you can keep it. If it's porous like wood, or has deep scratches like an old...
  22. Oh, you totally confused me. Keep eating gluten and insist that your GI run a celiac panel! If your GI continues to be useless, fire him and get another GI if possible. Most insurance plans have multiple specialists available and there is no reason to stick with a doctor who is not helping you. Your normal Dr. can definitely order a celiac panel if the...
  23. I hate to tell you this but that trapped feeling could be the source of most of your issues. Stress has a profound effect on both autoimmunity and your resistance to illness. It can directly cause depression too - look up "learned helplessness". And of course your adrenals aren't working well in a chronic stress situation! Remember that too much cortisol...
  24. I'm glad to hear you understand the dangers of eating gluten now. I wish it were as simple as tolerating being a little sick, but this isn't a diet where we can have a day off. It's often easier if you make or buy gluten-free versions of your favorite foods. It will help keep you from feeling deprived. There is a recipe section on the board where you...
  25. Well, I guess you will know tomorrow. It's very possible your symptoms are caused by gluten. Even if everything is negative, I'd strongly suggest give the diet a try. Drop dairy too for a while; it can be very hard to digest if you have a lot of inflammation/damage from gluten issues. Non-celiac gluten intolerance can still make people pretty sick...
