Right, and whether long enough fragments to be troublesome remain and in what amount. Problem is that it may be different according to the process used, and probably from one batch to another. There are 20 amino acids, so protein will usually yield ~5% MSG if it's fully hydrolyzed. Gluten is unusual to make so much MSG. -

Are you talking about hydrolyzed wheat starch or protein, Lisa? It would be nice if the protein were processed to remove residual gluten. I have read that the starch can be gluten-free if it's processed heavily enough and of course there is the 200 ppm codex starch in Europe. Sorghum syrup (also called sorghum molasses) is a decent substitute for malt in a milkshake. You can use molasses in a pinch but sorghum is closer to malt. My GAPS book says if you're having a lot of digestive issues to have cooked vegetables and to discard fibrous parts like broccoli stalks, thick stems on greens, or skins on squash. If you have the energy you might do better making carrot soup? I know cooking is hard when you are that exhausted and maybe it's better to just eat them raw to get calories!... -

Hydrolyzed wheat protein isn't pure MSG. Protein is usually a mix of all the amino acids. Whatever proportion is glutamate ends up as MSG. Wheat protein is favored for making MSG because it has a very high proportion of glutamine compared to other foods. The hydrolyzed wheat protein is a legal way to get around putting MSG on the fries. I'd guess there are more people worried about MSG than gluten. That sounds like my exercise-induced asthma. My doctor prescribed a puff of albuterol before I exercise and it makes a big difference. I have a much more difficult time exercising outside becasue of pollen so I usually take indoor dance classes or work out in a gym.

I finally figured out something good for coffee. Use the rich coconut milk that comes in a can, not the watered-down "coconut milk" beverage. I even found an organic brand that doesn't have any guar gum or other additives. It gets a little lumpy in the fridge from the coconut oil but it dissolves fine in hot coffee. -

People make a great point about other problem foods. I'm also intolerant to dairy and nightshades, though I can have a little butter or pepper. I wouldn't eat a potato or a hunk of cheese. Hi, Pea and welcome. That sounds kind of like how I used to react to shellfish, though it was more itching than soreness. Do you have food allergies? Gluten-free mixes have a lot of ingredients that might not be in normal mixes.
