  1. I just read the GAPS diet book and it was sooooooo informative. I would recommend it to anyone wanting to learn more about how digestion works. It's not cheap but it's the best $$ I've spent in a long time. Open Original Shared Link
  2. I was about to suggest the GAPS book too. There is a lot of information in that book, plus a lot of useful references. It's well worth reading for anyone with GI/emotional problems and/or food intolerances. I didn't take the GAPS book as suggesting that gluten is the root cause of leaky gut. The zonulin research doesn't support that idea either.
  3. Yes, that's the most recent idea. And no, I'm not going to cite references because I've read so many in the past few days it would be tantamount to writing a review article. (I'm in the midst of writing two scientific articles for work and the thought of citing more literature is enough to make me whimper!) The idea is that a leaky gut from dysbiosis or...
  4. Typical symptoms would be bloating, gas, cramps, nausea, and diarrhea, and it usually takes a little while to get symptoms, but you're the one who knows YOUR lactose symptoms. Everyone is different and some folks get really weird symptoms from foods they can't tolerate. That cheese should be very low lactose but if those are your typical lactose symptoms...
  5. As other folks said, casein is a protein in milk that a lot of gluten-sensitive folks don't tolerate very well. Since aged cheeses are very low in lactose, usually people eating soy cheese are doing it because of casein intolerance or a vegan diet. That's why I found a soy cheese with casein very confusing. If you're not intolerant to casein, real...
  6. This thread just continues to appall me. You can't be pressing people to reveal personal details on the Internet. Her location and school are nobody's business but her own. Besides, finishing ones bachelors at 21 is normal if you go into a 4-year program right out of high school. There are also some countries where medical school is done directly out of...
  7. Aged hard cheese is lactose-free. I still don't get why RVluvin is eating them?
  8. You are a wonderful parent, and feeling a little guilt is going to happen. You can't cling to it because you're doing great if you're six months into the diet and this is your first big CC incident. Here's the thing. As long as DS is gluten-free as best you can manage, HE WILL BE FINE! You forgive yourself because mistakes are part of this diet. ...
  9. Out of curiosity, what's the point of eating those? They have casein so they are neither vegan nor casein-free. They are heavily processed and don't look like a particularly healthy option to me. Your dogs are wise.
  10. It could be the pizza, or you could have just gotten unlucky with a GI bug. Sorry you're sick and missing the parade. That sucks. I usually take Immodium if the D continues more than a few hours. I figure the first round of D is sort of a way to flush out the gluten but a long spell can leave you dehydrated. I also find Pepto-Bismol helpful for...
  11. Thanks, Takala! I got it in my bibliography this time. They keep trying to put oats in the celiac diet because "grains are good for you." Grains are overrated.
  12. I know going undiagnosed is frustrating, but it's good that your biopsy isn't a mess. Make sure you ask for the deamidated gliadin peptide IgG blood test. It's the latest test and the most sensitive. They should also run TTG (tissue transglutaminase) IgG. After your blood testing, the next step is to get off gluten while you're stateside since gluten...
  13. If you get the right mix of bacteria, hydrolyzed wheat can have the gluten broken down to where it's below 20ppm, and sometimes below the level of detection entirely. I am concerned about traces of gluten in foods like that and it's not hard to find rice crackers without anything derived from wheat. I would find another brand.
  14. Disney does gluten-free too. You have to set it up in advance but they are very careful! Disney is definitely a cut above. I don't remember Sea World being that easy. I think I got a "huh, what?" with the gluten and had to find a manager.
  15. I just read the GAPS diet book. You mention feeling better low-carb. Perhaps this is a solution that might help you? The idea is that all these vague, unconnected symptoms, including gluten intolerance, are a result of out-of-whack gut bacteria. It runs in families because the bacterial imbalance is passed from mother to child at birth. The symptoms...
  16. That's like saying "You have just a little cancer but you should wait until it's really severe because chemotherapy is so uncomfortable."
  17. Have you gone to an ophthalmologist? They're sometimes quite good at diagnosing odd vision problems.
  18. Yes, the feelings eventually go away. I've been gluten-free over five years now, and the only time I get upset is when I specifically arrange for gluten-free and it doesn't happen. I go to buffets and social functions assuming that if I haven't made arrangements for gluten-free food there won't be anything to eat. In professional situations, you'd be...
  19. I'm so sorry to hear you have Cushing's. I'm VERY glad to hear it's not cancerous and they can treat it with surgery. I feel your pain. I really could do without this thyroid autoimmunity. Isn't one autoimmune condition enough? I agree. We should get a pass. If you have celiac and manage the diet, you should get to live to a ripe old age with no other...
  20. It just depends on the person. Almost nothing in life is "all or nothing" including gluten intolerance. Mom is negative by blood and biopsy. She can honestly eat a little gluten and it makes no difference. She tried ultra-strict on my advice for a few months and went back to eating bits of gluten here and there because it just plain didn't matter. What...
  21. Heck, I made a couple bricks and doorstops along the way learning wheat bread.
  22. I think I saw that somewhere too, that some strains oats are more celiac-friendly than others. I'm a little too busy to try and figure out where I read it.
  23. Above all, listen to your body. If you feel best 100% gluten-free that's how you need to eat. Your doctor doesn't live in your body, and while trying to desensitze to gluten would be nice, it's not clear that it works like an allergy where exposure is helpful. Most of the studies I've seen where people recovered gluten tolerance, it happened after they...
  24. Nitrites are kind of nasty. Happily they're pretty easy to avoid. MSG is a little harder because it occurs naturally in a lot of foods. Maybe keep an eye on nitrites? Soy and corn are mostly GMO in the US, unless the food is specifically labeled organic. I think that's part of why they cause us sensitive folks so much trouble. You really don't have...
  25. He's close but it's not the whole story. This issue of "leaky gut" and intestinal permeability and autoimmunity is extremely important. There are studies showing that introducing cows milk, eggs, and even root vegetables too early in infancy can help trigger type 1 diabetes. Even more compelling is one showing that the combination of an enterovirus (that...
