  3. Are you making pancakes with regular flour in your kitchen??? I wouldn't even consider it. Wheat flour does not cross the threshold. Period. I know that feeling about wanting to demonstrate that you're strict on the diet around family. With me, it's wanting them to understand that they can't just feed me anything or drag me to random restaurants.

  7. If you are showing signs of deficiency, find a doctor who will. My doctor ordered them when I wasn't feeling well without batting an eye. He also tells me not to bother gluten challenging because I feel better off gluten and the celiac tests are too unreliable.
  8. The main issue with eating too much protein is that it's hard on your kidneys. It's not only ketosis that's an issue, but the long-term effects of getting rid of excess nitrogen. Doctors routinely run BUN and creatinine so they'll pick up any issues.

  11. As far as fiber, I really like beans, steel cut oats, brown rice, and I always buy the wholegrain gluten-free breads. You also get fiber from veggies and fruits.   12. For me too much starch will do it. I'll sometimes have an overwhelming need for a nap after eating a bunch of white rice. Gluten-free baked goods like Udi's are quite a bit starchier than wheat so you may have shifted your diet to too much starch.   19. Mash, SOME celiacs do show IgG in blood, but there is also IgA in the mucosa and damage. The only way to know is the biopsy. Agreed that IgG is more often associated with intolerance, and that some IgG intolerance can be transient.

  21. He is IgA deficient and NOT celiac by bloodwork. They did the IgG versions of TTG and anti-gliadin, which are the correct tests for IgA deficient folks, and both were negative. That doesn't rule out false negative tests and gluten intolerance.
  22. Yes, studies have shown that being low-normal makes all IgA related testing less sensitive. The lower the IgA, the worse the loss of sensitivity on the celiac panel.

  25. Pot roast that I put in the crockpot this morning. Beef, red wine, onions, mushrooms, a couple cloves of garlic, salt. Thicken the broth into gravy with arrowroot starch and serve with potatoes and a steamed veggie.
