    For starters, you cannot make inferences about something like calcium with only one lab result. It's too variable and you are essentially in the normal range. An easy thing to check is vitamin D.     The blood tests are only about 70% accurate. You can be celiac with negative blood tests. My guess with gluten intolerance is that the intestinal inflammation might be interfering with absorption. My mom is negative by blood and biopsy, but had a severe B12 deficiency and low D.

    I'm glad I've always specifically mentioned I'm ordering gluten-free. I hadn't thought how confusing that menu could be for servers. From my point of view it gives me a sense of safety. If I'm eating the ONLY ribs Outback makes I know that my plate of ribs can't be inadvertently switched for a different kind of ribs with gluten.

    Oh, gosh that sounds hard! On the bright side, super-sensitivity CAN come and go. I went through a super-sensitive phase and now I'm back to eating "normal" gluten-free and feeling fine.     Dissolving something means to get it mixed with liquid. For example, honey dissolves in water. As I'm sure you know, you can't clean up spilled honey by spraying water on it, walking away, and letting the water dry.     I cleaned up the breadmaker pan and paddle really well, and made sure the inside of the top of the breadmaker was really clean. (I was worried about old flour falling on my bread.) I didn't worry too much about the bottom of the machine by the heating coil because the bread never touches it. I don't make gluten bread any more so no new flour is going in...

    CC on shared lines makes a LOT more sense than undeclared gluten. That's a serious accusation to make lightly, as good companies like McCormick are careful to declare wheat in the US.     Olive oil that's just starting to go rancid has a weird "dusty" smell to me. Once it's really oxidized you can't miss the distinct smell of old vegetable oil.     You don't need to check the date. Just sniff it! It's easy to notice when it goes "off" and I agree it can happen pretty fast.

    I AM a professional. I just don't write in technical terms on the board because nobody would understand me. I saw a talk on that enzyme not too long ago. I'm surprised you're not getting thyroid testing; gluten intolerance/celiac is a common cause of thyroid disease.     Hi and welcome. It sounds like you may be suffering from neurological symptoms from gluten. With neurological autoimmunity EVERY SINGLE BLOOD TEST CAN BE NEGATIVE!!!     HMO physicians do NOT have the time to stay abreast of literature. They work 10-hour days and come home exhausted.     I love getting ribs at Outback. I can never be sure about barbecue anywhere else so it's a treat. The gluten-free brownie dessert with ice cream is also excellent.

    Between my multi and extra D3 I'm taking about 3,000 IU of D3 a day to stay over 30 pg/dl. I don't seem to absorb it very well. I feel generally better taking the vitamin D. Less fatigue and run-down feelings.

    I've taken to desperate measures like "RSVP so I have enough treats!" on the invitation. People are terrible about responding to invitations. I would figure on the four and a couple extras too.

    Oh, gosh. This guy is an idiot. Celiac cannot be diagnosed from stomach biopsies. The biopsies must be taken from the small intestine, and the state of the intestinal villi are diagnostic for celiac. I can't understand how the estimated 1 in 133 Americans with celiac would be "exceedingly rare." If you are only diagnosing with Marsh 3 or 4 biopsy there...
