  1. Just had to say "YUM!" Tonight it's: -wok-fried sliced red peppers, cabbage, kernel corn, marinated tofu, peanuts, and vermicilli rice noodles wrapped up in steamed collard green leaves -curried sweet potato soup (made with coconut milk!) (yes, vegetarian)
  2. (Easy) Vegetarian Meal: -yellow squash and gruyere cheese casserole (I'm using Corn Chex in lieu of bread crumbs; we'll see how it turns out) -roasted green cabbage -roasted beets (I want peanut butter cookies too now!)
  3. I just returned from a trip to SA, where I visited Jo-Burg, Cape Town and Durban. I wanted to comment that I found gluten-free food with no more or no less difficulty than in the states. I tried researching options before I left, and found little information online. Once I was there though, to my surprise, I found many options and a range of people who knew...
  4. Vegetarian Meal: -carrot soup, with golden honey & thyme -sauteed broccoli rabe with raisins -tomato gratin (with gluten-free breadcrumbs, of course) -brown rice pasta with pesto sauce
  5. I have trouble with breakfast, so these ideas are helpful. (I'm thinking rice cakes with peanut butter tomorrow.) Today was leftover hot gluten-free cereal from Bob's Red Mill that I originally made with added blackberries and raspberries which I revived by heating up with milk and adding sliced almonds and banana slices. Plus herbal tea.

Veg meal: -eggplant gratin (naturally gluten-free!) -braised zucchini & yellow squash with minced yellow pepper & thyme -stuffed green pepper filled with Indian-style basmati rice, corn kernels & flavors of tomato, onion, garlic, etc. (leftover from lunch yesterday) love2travel: you really love Vichyssoise Soup!

  9. Sounds good! My guess is that you could use corn flour too in place of the Corn Chex.
  10. Excellent suggestions from kareng. I have trouble with breakfast too since I went gluten-free. A lot of times I eat leftovers. But looking at what you're already cooking up - chex cereal & pancakes - you could easily add some nuts and fresh or dried fruit (along with milk in the cereal) to make the meal more substantial.
  11. Nice recipe, Roda! I use quinoa like rice sometimes. You could cook it in the chicken stock, roast the other veggies, then pile your roasted veggies on top. No need to include a protein source since quinoa includes protein (pretty neat), but you could sprinkle with some grated cheese or chopped toasted nuts for added nutrition and flavor. So easy. So good...
  12. This sounds so yum! Nice contrast of flavors & textures. Tonight was vegetarian (as usual): -Indian ratatouille (a fun fusion dish!) -Indian-style basmati rice -grated carrot salad with yellow raisins and toasted cumin seeds -poached pears with vanilla ice-cream and chocolate sauce (a contributed dessert : )
  13. Also, it's really easy to make your own vegetable stock (I swear!). And also healthier, better tasting, cheaper ... There are many tutorials online.
  14. A really easy tomato soup from Martha Stewart: Open Original Shared Link This takes just a few minutes and uses very basic ingredients. (I use vegetable stock, and not chicken stock.) Highly recommended!

Vegetarian meal: -poblano and corn chowder, same as last night -roasted butternut squash, chard, sliced grape tomatos and ricotta pizza with thyme (using up leftovers) I'm so happy to find out that I can still have pizza - as much as I want, as long as I cook it. I made my crust myself using yeast - fun!

  17. Welcome back love2travel! Hope Croatia treated you well. I borrowed from love2travel tonight, and made a roasted poblano and corn chowder plus an upside down vegetable cake with broccoli and cauliflower and starring dill. Nice!
  18. I think you grow them?!? I don't know. That's why I just substituted regular old basil and dried cinnamon. The flavor is delicious, so I'm not holding out for the real thing. : )
  19. These are extra nice - savory & sweet. My friend said that they taste like pastries he gets in Chinatown. Must be because of the rice flour. They're nice for sharing with non-celiac pals.   22. You'll be an example to your kids or your nieces or your nephews! And an inspiration to everyone else who wants to quit smoking, but thinks they can't. Heck, to me. I know how hard it is to quit smoking. I watched my mother struggle with it for years, before she died of lung cancer in her early 40s. Please, yes, be that example and that inspiration.
  23. Everyone's dishes sounds wonderful! (Can I come over for cranberry chutney?) I'm going out, and surprisingly it's easier to find an affordable pre frixe meal that is gluten-free than it is to find one that is vegetarian on Thanksgiving! I love Thanksgiving dinner. I'd like to cook, but none of my other friends do. I'm going to the Macy's Thanksgiving Day...

  25. It was so exciting to get my Vitamix! I hope you have fun with it. I use my Vitamix in place of a blender or a food processor (which I don't have). It has a lot of functionality that I try to take advantage of. Even so, I was looking through the booklet just now, and I totally forgot that it can grate cheese and that it can make peanut butter. I do make juices...
